But when I had a vertical smoker I would put the ham I was smoking at the same time over it so those sweet juices could drip on it all night long. We are having Thanksgiving on Saturday this year thanks to Capitalism. You know, supply and demand and whatnot. Gotta find something for the wife, youngest and I to do on Thursday. Will brine on Tuesday, spatchcock & cook Wednesday. Haul to camp reheat & eat on Saturday. The back, neck, cast off trim bits & offal (other than the liver & kidneys) go in the pot to make the gravy stock. Also stopped by Companion Bakery.
