I agree with Gavin.

I often wonder about that.. why not just use the color of the prey fish (like shad or bluegill). I think a lot of it is the confidence that the fisherman has in the bait or the color of bait and they tend to fish it harder or longer than others. Guess it could be a factor of more or less visible at depth?
