Wayne SW/MO Posted January 7, 2014 Posted January 7, 2014 That's the way I generally do it. I take out the backbone, but generally leave the ribs. I wish the fine bones were easier to remove. I also pressure cook them and then break them up while removing the bones. I then use the meat to make patties. I also hit some with smoke, 30 minutes, and then bake them, bone them and mix the meat with cream cheese, onions and a splash of lemon juice. Great on crackers. Today's release is tomorrows gift to another fisherman.
