This is the original recipe. My wife alters it some.

1 can shoe peg corn, drained

1 medium tomato, chopped

½ medium green pepper, chopped

3 green onions, chopped

1 jalapeno pepper, chopped

2 tablespoons mayonnaise

Seasoned salt to taste

Lemon pepper

Whole wheat wafers

Drain corn and add remaining ingredients including a generous amount of lemon pepper. Let stand at least 1 hour before serving. Serve with whole wheat wafers. Yield: 10 servings.

White corn may be substituted for shoe peg corn.

Now you done gone and did it Dave....dang now I got to add to that grocery list for today. I don't know if anyone else got to try it. I was hovering and grazing over the bowl most of the day..... :lol:
