Terry Beeson Posted September 5, 2007 Posted September 5, 2007 I had some ground venison (with bacon) in the freezer that needed something done to it. My wife was talking to a patient about it and he suggested this recipe for summer sausage. I made some yesterday and MAN OH MAN is it good stuff!!! You can "play around" with the spices a bit to get a flavor you want. This will be a good snack in the deer stand while waiting for the kill shot to take effect... SPICY SUMMER SAUSAGE 3 lb. Ground beef, pork, venison, or mixture. 1 C cold water 2 Tbs Morton Tender Quick salt 1 Tbs Liquid smoke 1 Tbs Garlic juice 1 Tbs Onion powder 1 Tbs Mustard seeds 1 tsp Ground cumin 1 tsp Red pepper flakes 1 tsp Cajun Louisiana seasoning blend 1 tsp Black pepper In large bowl, combine all ingredients and mix well. Roll into 4 rolls of equal size. Wrap tightly in plastic wrap and refrigerate for 24 hours Unwrap rolls, place on baking rack. Bake at 300 ° F for 1 ½ hours. Cool and wrap in aluminum foil. Refrigerate or freeze.
