    Chicago deep dish tonight. Recipe swiped from a pizza forum: supposed to be a Lou Malnati clone, and I’d say it’s pretty close. Dough is about 20% semolina and has a decent amount of oil and butter in it. No knead, just mix, let it rise 1-½ hours then in the fridge overnight. Press it into a straight-sided 9” cake pan, making sure the upper edges are thin so they crisp up nice. Toppings in reverse order— cheese (whole milk mozzarella), Italian sausage then crushed tomatoes. Topped with Romano. Second time I’ve done this and it was very good both times. I’d do a little less tomato next time.

    Just one glass of wine, then it’s off to patrol the area in my Crown Vic Marauder! Love to send those punks scurrying when I hit them with the spotlight!!

    ness is breaking (almost) all the rules! It’s December...43 degrees outside, yet I have unscrewed the top on a delicious Marlborough Sauvignon Blanc! Note: it’s after 5:00 and 67 inside 😄 Then, there’s this fridge full of ho’made Irish Cream, all girlied up with fancy bottles and Christmas tags! It feels so right to be so wrong! 😄
  7. I’d rather read about proper preparation of beef tongue than another pissing match about gigging. And I’d rather read about just about anything else but proper preparation of beef tongue, for a little perspective on where I stand on this. Wally— any room for me in that fox hole?

    I toasted them and smooshed them between a Hershey bar and some graham crackers. I’ll do marshmallows next time.
  11. What’s more important, man? Getting your kid the GI Joe with the king fu grip, or proving this hillbilly doesn’t own the stream? Geez. Just a stinkin’ keyboard cowboy who ducks and runs when the call to action interferes with shopping or the wife’s plans. I feel nothing but pity for you. Who’s still in? Who’s bringing something to put under the cilantro??

    Not enough time in my schedule to hunt and forage and harvest these days. But I take satisfaction from compiling ingredients from the store into a tasty dinner that’s not available frozen, in a drive through or from a steamer tray somewhere.

    I suppose I’m a meat and taters guy, a lot like my dad. Shepherd’s pie has all the right stuff as far as I’m concerned. Ground beef, onion, rosemary, brown gravy, wine, corn, peas all under a canopy of browned mashed taters. I’ll dang this myself, even if it’s against protocol.

  15. I’m in, big time!! But why wait until summer? Hell, by then we’ll all have had time to think of a million reasons why this is a bad idea. I say the sooner the better. Strike while the iron’s hot. I don’t have anything going on tomorrow. I’ll bring bear spray and a few extra handguns, in case any of you don’t have one. Gavin: can you handle the food and drinks for us? I’m no good at that stuff, as you’ve pointed out before. This’ll be great.

    Racked it off the sediment into a 5 gallon carboy to further clear and age. Final gravity came in at 0.996, so this should be pretty dry which is what I’m shooting for. Alcohol ~ 6.8%.

    We made some Irish cream last year for gifts, just for the fun of it, and we’re talking about doing it again this year. Gf liked the extra chocolate in it.

    Aw, to hell with ya both. This stuff tastes gooder than that stuff.

    Very important taste test tonight. It was done blind, but the color difference was a clue. Kerrygold is thicker and more chocolatey. Bailey’s is still really good and has a little more whisky bite. It’s the sentimental favorite but Kerrygold wins.

    Alright, this was pretty tasty and I didn’t have to cook it. Panko breaded chicken cutlets, roasted butternut squash, peas and mushrooms, and rice/almonds mix from a box. My cooking contribution was a quick white wine, lemon juice and butter pan sauce.
  21. I was starting to think Bosnian was code for something. I guess there are some around? That’s not a group I hear anything about around here. Biggest trout I ever caught was a fat stocker out of a local municipal lake many years back. I took a picture and put it back. An Asian fellow down the bank looked at me like I was nuts.
