MOBass Posted January 6, 2012 Posted January 6, 2012 It was a most excellent get together. I am glad I finally made it to one. The goose poppers were oh so good, Lenoard would you care to share the secret on those? Sea horses were awesome, there was a little spice too them I wasn't expecting. And the jambalya and meatballs.....mmmmmm. I need to hit the gym hard now. I brought muffins this time, but will be sure to have something more substantial next time around. I am leaning towards chocolate cake. Fishing was excellent. It was all I wanted on the spinning gear throwing a 1/6 oz Bass Pro XPS spinner. The hook seems a little on the large side, but made it very easy to grab at the bend and turn the hook out. The 1/12 oz Kastmaster in gold worked well also. I only managed three on the fly rod on a scud before throwing in. The upper end is a lot different than it was a year ago.
duckydoty Posted January 6, 2012 Author Posted January 6, 2012 MOBass, I took the goose breast and sliced them on a bias cut getting 12 slices out of each breast. I then took the slices and marinated them for 2 days in a mixture of one can Mt Dew, 1/2 cup worschestershire sauce, 1/2 cup soy sauce, and a squirt or two of lime juice. After marinatining, wrap each slice of breast around 1/4 piece of string cheese and a slice of fresh jalapeno, then wrap a 1/2 strip of bacon around the whole thing and peg with a tooth pick. Cook on the grill on high heat untill the bacon crisps up a little and the cheese starts to squirt out the ends. Love eating goose this way. We also save some of the sliced breast after it has marinated and use it in stir fry with pod thai noodles and peanut sauce. My mouth has started watering again......
