I've always eaten fried fish but recently bought a Big Green Egg so I had to try to grill some. Went up to Truman 3 weeks ago & laid into the white (blue) cats (while crappie fishing was slow on Stockton) so I figured they'd be as good as any. Tried some on wood planks with butter & seasoning & some in foil. They were pretty dad gummed good!! You can't beat fried fish but grilling them was a nice change. by the way, I'm new here and appreciate everyone's comments.

Ok this is what I did. If I did some thing wrong tell me. I got some of the fish we got and fried it. I put it on med, put in some oil, got some flower and 1 egg. Than diped the fish in the egg than the flower. Than put it on the pan. I let it cook till it got a dark brown than flipped it. did the same. cooked for about 2 to 3 mins on one side. Then I got my two youngest and they eat all of it. My boy said it was good. My little girl well not sure. she is only 2 but there was none left on her plat. I did not eat none as I don't eat what I cook. but when I bar b Q. Now the thing is did I do it right or can kids just eat like a dog??? I mean they like there butts soo LOL Thanks justin

Microwave!

People think I'm crazy.

Take a plate, melt butter on it (olive oil if you're trying to be really healthy). Sprinkle your favorite spices on the plate with melted butter. I use lemon pepper, season or garlic salt. Put the fillet on the butter and spices, rub it around and turn it over. Fill the plate with fillets. Season again.

Cook full power for not more than 4 minutes. You can over cook it. I'd do 3 to 3.15 and see if it's done.

I'm serious- this is drop dead good. I do it with trout, white bass and crappie. Sub out spices... add squeezed lemon. It's quick and healthy- even with the butter. I would not use margarine or a substitute butter- I'm not a fan. Too much water and you're fish will be rubbery.

One other thing- cut the line of small bones out of the fillet. They run down the middle of the fillet- you can feel them. They won't cook out- better to get them out before or after cooking. They tend to stick between the teeth if you don't.

I tried your microwave method tonight on the crappie I caught yesterday and I really liked it. I used lemon pepper,red an black pepper, and a little bit of garlic salt microwaved for three minutes and was done. Lot less hassle than oven cooking. I still like fried but this has to be better for you...sucks to get old
