The Brits Do Some Things Well - Fish Is One

Ingredients

2 - 4 large potatoes, peeled and diced

2 eggs

2 large handfuls of fresh spinach (large handful frozen)

1 onion, finely chopped

1 carrot, halved and finely chopped

1 Tbs. extra-virgin olive oil

1 3/4 cups of heavy cream, divided.

¼ stick of butter

2 good handfuls of grated cheddar cheese

Juice of 1 lemon

½ tps curry powder

1 heaped Tbs yellow mustard

1 pound haddock, cod or walleye, skinned, boned and sliced into strips

Salt and pepper

Method

Preheat the oven to 450 degrees.

Put the potatoes and the eggs into a pan of salted water. Bring the pan to a boil over medium heat. Boil gently for 10 minutes. Remove the eggs to iced water to cool. Turn off the heat under the potatoes.

Nuke the spinach for 2 minutes and allow it to cool. Squeeze the water out.

After 10 minutes, remove the eggs from the ice water and peel and quarter them. Put to one side.

Drain the potatoes in the colander. Add cream, butter, salt and pepper and mash.

In a separate pan, slow-fry the onions and carrots in a little olive oil for about 8-10 minutes.

Add the cream and bring just to a boil.

Remove from the heat and add the Cheddar cheese, lemon juice, and mustard. When the mixture cools, add the fish and spinach.

Put the fish mixture in a decent sized casserole dish and mix together. Spread the egg quarters on top.

Check the mashed potatoes seasoning and add salt and pepper as needed.

Spread the potatoes on top of the fish mixture.

Place in the oven for 35 - 40 minutes. Brown and bubbly goal.
