  1. Sorry the 215 bridge going over maze. (I think its maze) im drawing a blank. Its around from cedar ridge
  2. 5 the 215 bridge just past the 4 way is holding some cats. Theyre still i few days from spawning out there. All the rain is holding them off a bit. H hwy bridge should be hot soon. Same setup as cathunter. 2-3Ft bobber and leeches,worms,shad,liver,shrimp etc. Will catch them. In a couple weeks the big gills will be around the chunck rocks too.
  3. Those looked and sound really good. Sometimes i will take a vinegar (wichever type i have) and sugar mixture and heat to a boil (i make the mixture pretty potent) and then add some ice to cool it (thus why making it potent as the ice balances it out) and brine my ribs in the mixture over night and then pat dry and procede with seasoning, smoking saucing etc. Its a bit different but very tasty.
  4. Lol i wondered about that as well. I think everyone spends so much time on the main course they say heck with making dessert and have twinkies and ice cream.

  6. Walleyedmike is a member here and is very knowledgable on trolling. Last weekend his report was most were caught in 15fow or less. As far as how and where i usually start along a bank that i know or think is good and troll the contour starting in 10-12 fow with flickr shads. If theres takers in a trip down and back then i move out to 15-18 fow. I do this until i find fish. If im graphing fish at a certain depth but am not catching any after exausting all options on that paticular stretch i move to another and start at the depth i previously graphed fish. One thing to do to get a deeper dive out of your baits is to use braided line or walleyedmike said on his last report he was using lead core line. If they are deeper than 15fow or so and you are trolling cranks then that is a way to get a little more depth. If your graphing fish but not getting any you may slow down a bit especially using those lines cause you can still get a bit deeper with a slightly slower speed. I usually troll between .75 and 1.25 mph with #7 flickr shads. Various colors work i like purple tiger and anything chartrouse. The powerline cove bank across and down from ruark has produced many fish for me this time of year. I am no expert and dont come close to being as good as most of the members on here but those are some of the things i have learned from various people on here and they work pretty well. The main thing is to continue to work various depths until you find fish. Good luck and hopefully this helps a little. Ps... the cats are biting around the rip rap under bridges. I caught three this morning before the storm.

Just by what you said i would sautee onions and garlic a bit then add some white wine then broth and then all but the goat cheese and cook. I agree the cheese would probably need to be added half way though. Sounds great. Think i will give that a shot soon

  10. I appriciate the feed back...but as usual it xoesn bother me what others think...i do however think that the food world has become too far from its very purpose. I love to compete dont get me wrong...i just do it to become better. I do though disagree with the two plate system for every course because of the waste. Which is something i plan on changing but to do so i first have to experience it and be a part of before being listened too. This is also something that has gone on since the begining as humans period are competetive the only difference is it being publisized now. Any how i think its time for some pulled pork today with all this talk of bbq. Good day fellas
  11. Yes its www.skillsusa.org. it is through my college o.t.c. but there are lots more around here at the profesional level too. Msu just did one called show me chefs that will be on air this fall. If if hadnt been for me having class on the nights that one went on i would have entered it too.

  13. Mystery basket style. 4 courses...salad, soup, and two entrees with judging on knife skills, meat fabrication, and specific cooking methods and requirements for each course. Ive won the district and state one last year and this year and placed 13th in the national one last year.
  14. Lol good stuff. I need to transfer all my pics to my computer off my phone so i can post and share them. As for others photos they are all great. I have a national level competition i will be competing in at the end of the month and there are a lot of things ive seen on here that are provoking ideas! Great food everyone!
  15. The bad part about all of this crap being spouted off is most of it is coming from seasoned longtime members that should know better. To all the people who will read these threads like this and turn away from this forum i would like to apologize for the nonsense. Its not all like this and there are some very great things to learn on OAF and its members....just not all of them.

  20. I agree jim...seems as if some are trying to qualify for a seat in washington...lol sorry i couldnt resist. Sorry for hi-jacking your thread slab. I hope to get out some next week and look for some crappie. You may have pm me with a bit more info on long lining jigs. Ive only heard of that a couple times. Although im sure i can google it. Btw 13 keeps with the eyes as a kicker is still a good day in my book! We`re gonna have to hit the water sometime!
  21. Most of the time thats what i do too. Fish the rip rap around bridges. Cork set around 2-4 ft deep with a number of baits...crawler, shad, leeche, shrimp too name a few. Channels spawn at 75-80 degree water and WILL NOT EAT while the males are on the nest and the females get ran off because they will eat the eggs. So if they stop biting at one place go to a bridge with cooler water. I start at aldrich and work my way to twin bridges and then towards the dam. Then after spawning i fish flats drifting. Males will stay on the nest 2-3 weeks. After they will gorge on shad on the flats early and late.
  22. Great deport slab. I havent been out lately but about now is when i start it up again. Its hard to pull away from catchin 10-15lb cats this time of year. Although its been a lil slow since all the rain and ive been to tight on time to go where they are. May do some trolling soon

  24. Lol there always has to be one who talks bad about the thread. Funny thing is it to you 21 page to say something. These peacock colors and knowing where and why food is what it is makes me a lot of money so i think i will continue to laugh at closed minded opinions and do what i do along with all others on her that are appreciative for what GOD has given us to "play with". Thanks also to phil for tge ability to share such things and make new friends. Cook what you like and eat what you want but always do it from the heart!
  25. You are correct...just like the plate is the canvas inwhich you creat your artful dish the bun/roll/bread is the base/foundation for any sandwich. Those are great looking rolls and burgers!
