Ha! I was going to make beef stew today!

So Ro wanted some Beef Stroganoff for our meal today. This is her specialty dish that she has made since we got together 25 years ago. I had never had it until she made it for me. I have been hooked ever since. Hooked on her and the dish. She wanted to go do girly things today but would make it when she got back. I told her don’t worry about it, I got you. Now I’ve had Jambalaya on my brain this past week since it’s been playing everyday in my news feed. So of course I made me a big ol pot of that to eat on all week while she travels. So I got the jambalaya done, made a pot of bbq sauce, and then got ready to make the featured dish of the day. But this time with a bit of a twist. Now, she has not made the fancy, traditional Stroganoff, but the simpler version with a mushroom cream sauce. And it’s fantastic!! And that is basically what I did too. But I sautéd onions in butter first. The big twist on this was what I used. Instead I made use something other than what most people use, egg noodles. And others will spoon it over mashed potatoes. Which both versions are very good. This time we used Gnocchi! Yeah! Crazy! Gnocchi is a potato pasta like dumpling from Italy. We found it a week ago, bought it and didn’t know really what to do with it. Well we know now what to do with it!! Most recipes we researched used it like pasta with a marina sauce. And that was the direction we were headed. Until this idea came up today. We had a bag of egg noodles on standby just in case though. But they weren’t needed. This was a fabulous twist! Ro says we will be doing again for sure! And this opens up other possibilities too!! I’m thinking of all kinds of things now! Get out side of your box! (Sorry, the picture leaves a lot to be desired!)

Well, I guess the actual definition does state dried. But I’ve seen them come in a variety of ways.

I believe just smoked. Dried is one option.

Both of those are top shelf in my book! Regular Tapatio and Chipotle Cholula.

I hate to buy them because they are extraordinarily expensive, but love to use them because they work so well so many ways, chicken tenders.

So I told you the other day about the KFC bowl and that I was going to kick it up a notch. So in my version I added green beans and dressing. I think the dressing really makes it. Green beans or corn or both is just a preference. Picture quality leaves a lot to be desired. But my taste buds didn’t care one iota!!

Ever make a meal that you think is going to wow you? And then it doesn’t? I fully admit, it happens. That’s why I generally don’t follow recipes as written. Today was no exception except for one exception. I made Marsala Chicken. It’s an Italian dish with Marsala wine. Not being much of a wino, I skipped buying a bottle of Marsala wine just to use 3/4 cup. Which I highly doubt my acutely trained culinary palate would have distinguished anyway. So basically all I did was make a garlic cream sauce. Really I made more of a garlic cream gravy. Which according to the recipe is what it really is, a gravy. That’s just not what they call it. It really wasn’t a bad meal. Ronada really liked it. But if I don’t get a flavor punch in the mouth, I’m not satisfied. I’ll make this again but with more POW! Stay tuned!

The Frisco ran one or several trains from St. Louis probably as far as Neosho stocking fish at most all creek crossings early on. I don’t have any hard data on it. I have never seen documentation that any of these trains ran after the Missouri Pacific line was built from Carthage to Diaz Jct. AR. If you research it, the MP and its wholly own subsidiary, StLIM&S started at each end and met in the middle. No other railroad has operated through or to Crane. But at any rate, I don’t know when the first documented stocking took place on Crane Creek. I don’t dispute that it may have happened in the 1800’s. I only dispute when it’s stated that railcar stockings took place on Crane Creek prior to 1905.

Again, I’m just saying Crane was not stocked by railcar in the 1880’s. The railroad wasn’t built through Crane until 1905. As stated, I fully acknowledge that stocking by railcar was widespread over the entire US during the late 1800’s early 1900’s.

You need to spend as much time researching as you spreading. Stocking by rail car is well documented all across the US. Now with that said, Crane Creek was not stocked by rail car in the late 1800’s. I haven’t been able to trace down the first recorded stocking of Crane. It could have been stocked in the 1880’s, but it wasn’t by railcar.

Speaking of restaurant food, I took the KFC bowl and made it better. Now, next time I do this, I’m really going to kick it up! Can’t tell you how yet, but you’ll be over the top wowed! ***Edit*** I mean I know how I’m going to do it, I just don’t want to let the cat out of the bag just yet.
