Just wanted to share what I did with my chicken salad. I'm really a plain Jane guy when it comes to this dish. I don't like nuts and fruit in it aka eastern Missouri style. Oh boy! That slipped.
Anywho, I had made a spicy pickle mayo for another project the weekend before and had some left over. Sooooo, I used that in the chicken salad. Dang!!
So the recipe I had for this concoction was to make your own kicked up mayo from scratch. Uh yeah scratch that!
I had been seeing this Hampton Creek brand mayo in the store for about a year now. I thought it was just a really cheap brand of mayo. I was literally bottom shelf. I happen to catch an episode of Andrew Zimmern and he was at Hampton Creek. What a freaking amazing thing these cats are doing. I look later and try to post a link.
Anyway, I bought a jar, it's plastic, are they still jars? This is the most amazing tasting mayo ever!!!! And that coming from a non-mayo fan.
Ok now for the spicy pickle mayo.
1c mayo
1 clove garlic
1/2 dill pickle chips
1/4c hot sauce
run pickle chips through processor and mix all ingredients. You may want to add more hot sauce.
I'm going to do a little tweaking on this but it gives you a great starting point.
