I've been posting TR's in South region on here from Grand Isle, LA, check my blog for info also. The redfishing is some of the best anywhere. I prefer to use my kayak but Bobby Lynns in Leeville, LA, now Top Water Marina (still using old web name, etc.) rented boats when I was there a few weeks ago (new owner mat not any longer)...15ft carolina skiffs...http://www.bobbylynns.com/boat-rentals.

As for lodging I like to camp at GI state park...nice, clean, and space...not many visit the island in Jan-Feb so you'll probably have it to yourself. If you prefer a room, Bridgeside Marina has rooms starting at $75....http://www.bridgesidecabinsandmarina.net/id24.html
As far as Jan-Feb...it's the off season, the fishing won't be the best unless the area gets a good warm up. Most everything will be closed or on limited hours. I plan to take my last trip in Dec...after that I don't go back until April. If you can go in Dec, the fishing has been great this year and was last year also.
