duckydoty Posted January 4, 2013 Posted January 4, 2013 I enjoyed the post Billethead started the other day about New Years Day Dinner. I've been eating a lot of duck the last couple of weeks. This is one of my favorites. Filleted duck breast marinated in a sweet citrus sauce (Mountain Dew and soy sauce) then pan seared in a little butter, long grain wild rice, steamed broccoli lightly drizzled with butter and an egg roll. BilletHead Posted January 4, 2013 Posted January 4, 2013 Ummmmmmmm, looking good and tasty I bet. If I can get my carcass out of the warm bed in the morning I am inviting ducks to breakfast at dawn, BilletHead "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!" rps Posted January 4, 2013 Posted January 4, 2013 Total approval DD! Try a marinade of 1/3 orange juice, 1/3 soy sauce, 1/3 mildly sweet to semi sweet white wine. First and third ingredients break down and add sugars, second ingredient adds color and salt.
JohnP Posted January 6, 2013 Posted January 6, 2013 Gonna have to try that, looks and sounds mighty tasty.
