Feathers and Fins Posted September 3, 2013 Posted September 3, 2013 The best thing about harvesting your own meat is eating it. I swear over the years I keep playing with ways to cook a goose and not have a smile on my face during the preparation and after the meal. It is so rewarding being able to feed my family and when my wife smiles it is worth it all. So on to this Dinner. First thing you want to do is take a knife and insert it in the middle of the beast and cut it at an angle making sure not to slice through it anyplace. Then take the knife and turn it upright to help spread the meat. Next is insert Picante Sauce (I use Pace medium) in the meat packing it full. The more the better To seal it in use toothpicks Place in a baking bag be sure to cut the toothpicks so they cannot pop the bag Cook for 45 minutes at 350 Finally serve and enjoy The taters are simply coated with Paprika and Pepper and Chives. The Asparagus is covered in a Honey Sauce. 1/4 stick butter 1/4 cup sugar 1/4 teaspoon nutmeg 1/4 teaspoon ginger 1/2 cup Honey Heat in microwave for 1 minute on full and stir for a minute keep stirring as you pour on. https://www.facebook.com/pages/Beaver-Lake-Arkansas-Fishing-Report/745541178798856

Feathers and Fins Posted September 4, 2013 Author Posted September 4, 2013 Play around with the stuffings its a lot of fun.... Pineapple, Orange etc are all good ones as is just adding Stove Top stuffing. Wild Rice will really make is good as well. Just no end to the ways to cook game. When people ask me how I cook it I laugh not in a disrespectful way but because I have so many ways to cook it. Just remember NEVER use sage for Dark Meat Birds. https://www.facebook.com/pages/Beaver-Lake-Arkansas-Fishing-Report/745541178798856
