Braunschweiger because it taste like the liver they feed trout?

I don't know, never tried it, but the braunschweiger spread is good. Maybe that's why trout are good?

Get a loaf of that miniature rye bread. On a slice of that bread, spread some cream cheese (or mayo), add some smoked trout (or salmon) top off with some chopped red onion and a couple of capers.
