I tried this recipe last night with 3 white bass, a catfish, a crappie and a drum (quit laughing). I added creole seasoning to offset some of the strong fish flavors. It was a surprising hit with the family. I liked mine with a touch of cocktail sauce.

I'm still walleye dreaming. I caught 6 last time out but no keepers.

Outstanding! BTW another spice I sometimes use is Cavenders Greek seasoning.

Do to circumstances brought on by you I now need the ingredients for the Salsa..... I have all the other stuff thanks to some cooperative donors this morning.

Dice a medium red onion or yellow onion. Rinse the dice thoroughly in cool water. That removes the burp and heartburn. Depending on the size of peaches dice 3 to 5 peaches. Seed and dice 2 or 3 roma tomatoes. Seed, pith, and fine dice a serrano pepper. Mince a small handful of cilantro or basil. Juice a small lemon. Combine the above and taste. Add salt to desired level, and sugar if needed. If you want more heat I suggest Franks Hot Sauce or srirachi.

BTW, mango works equally well, as does strawberry on its own or combined with either of the other two.

Mucho Gracias, to late for tonight but oh darn guess ill have to go get more tomorrow to try that.
