Riverwhy Posted June 24, 2014 Posted June 24, 2014 I tried this recipe last night with 3 white bass, a catfish, a crappie and a drum (quit laughing). I added creole seasoning to offset some of the strong fish flavors. It was a surprising hit with the family. I liked mine with a touch of cocktail sauce. I'm still walleye dreaming. I caught 6 last time out but no keepers.

I caught 6 last time out but no keepers. Outstanding! BTW another spice I sometimes use is Cavenders Greek seasoning.

I have all the other stuff thanks to some cooperative donors this morning. Dice a medium red onion or yellow onion. Rinse the dice thoroughly in cool water. That removes the burp and heartburn. Depending on the size of peaches dice 3 to 5 peaches. Seed and dice 2 or 3 roma tomatoes. Seed, pith, and fine dice a serrano pepper. Mince a small handful of cilantro or basil. Juice a small lemon. Combine the above and taste. Add salt to desired level, and sugar if needed. If you want more heat I suggest Franks Hot Sauce or srirachi. BTW, mango works equally well, as does strawberry on its own or combined with either of the other two.
