JohnP Posted December 15, 2016 Posted December 15, 2016 First off I'm sorry BilletHead, i did soak the goose breast over night in water while I tried to figure out what I was going to do with. On the plus side I did NOT marinade it just seasoned ;). Shot 3 geese and 3 ducks yesterday and been wanting to smoke them but never smoking waterfowl before didnt want to cook them all up and not like it. So took 2 of the goose breast and smoked them up using Cherrywood in the Masterbuilt electric smoker. Preheated the smoker to 235 degrees. Rinsed off the breast, patted dry, and seasoned one with salt pepper and garlic and the other with Mccormicks burbon and brown sugar seasoning before wrapping in bacon. Smoked for almost 2 hours before reaching a internal temp of 155 degrees. Foiled each separately and let them rest for 15 minutes before slicing them up. Can't decide which one I like better their both mouth watering good. They'd go good on a bed of wild rice with some asparagus but I doubt it will make it that long ;). BilletHead and Johnsfolly 2

Did you see in the whats cooking thread what I have going with goose breast?
