Homemade baked bean are always light years ahead of any store bought product. Unless you are so clueless you can't even do that! Here are some ribs at sunset.

As a general rule no I do not. But this one had just a little excess on it and I slightly trimmed it. Now a pork shoulder I always trim. I always try to test out my butchering prowess and try to get that big hunk of skin off in one piece.

Pulled pork nachos. Edit I did a trial run today, that's why they are in a container. Im going to do another BBQ gig this month and I'm thinking of adding these to the lineup.

My son and a friend went opening morning. Shot a few. Hooked up the camper and headed north on a wim. Ended up outside Maryville Mo. Shot limits everyday and catfished a local lake and the MO river. Had a heck of a time. Are making their way back now. Will be home tomorrow!

I run into this yahoo at a truck stop about a year ago. He had it in the back of his pickup and asked if I wanted it. Said he hadn't used in years and was looking for somebody to take off his hands so his wife couldn't get it in the divorce. Had a ton of fun but it was a ton of work too! By the time we agreed to do it, we had a week to get our crap together! We made it! The menu was chicken quarter, pulled pork, smoked Bologna with beans and tater salad with a drink. Think im going to add pulled pork nacho's on the next go round.

Had a little fun this weekend hocking my wares. Sold some BBQ in my home town Friday night. I hadn't ever done this before, but had always toyed with the idea. I had a blast and made a little money. Have been asked to return next month! I think I'm going to do it!

I hope it's going to be epic. Now I did cut into 1/4th's. The wife won't touch it because "it's red in the middle". Yeah ok, I'll eat it! But 10lbs at one time is just a bit more than I can eat at once. I'll freeze them until ready. So I'll smoke them one at a time as I get the urge for them. I'll make some French dip sandwichs out of one of them for the wife. Which I really like too!
