I've been doing some volunteer work with Special Olympics, and the Shriners, the last couple of years doing fundraising. This time we are raffling off a kayak in association with the Pumpkin Splash at the end of this month. Tickets for the raffle are $5 and all money goes to the Special Olympics. If anyone is interested in helping out, please contact me and I'll get the tickets to you. You do not have to be present to win. I thank you for your support!

Those were for some of the kids that were there too. Thanks everybody. It's was a pleasure to give back just little to these people that volunteer their time and effort to keep our flowing streams a littler cleaner.

This weekend a friend of mine and I did an appreciation cook for the Joplin Kayak and Canoe group. They do a lot of clean up work along all the local waterways. A couple of weeks ago they cleaned out a cave along Shoal Creek that had been used for years by the homeless. It was extremely difficult just getting to the cave, let along getting the trash out that included a large couch! Their efforts are much appricated!! We provided the chicken and everybody brought a side.

For chicken or porkchop or whatever gravy, I use the excess flour that I seasoned. But you probably knew that too. I always figured this to be the easiest gravy to make. Where do you think the problem is? Maybe you're not adding enough milk.

1/4 c drippings (chicken, bacon, whatever) 1/4 c flour 1 tsp salt 1 tsp pepper 2c milk Mix first 4 ingredients. Should be smooth not clumpy or too runny. Like making a roux sort of. Let brown to your tastes. Slowly add milk while stirring. Stir to desired consistency.

Elk River this morning is running over 53,000 cfs. That is not a typo. That is a massive amount of water! The cities of Neosho, Anderson, and Seneca were all shut down due to major flooding issues with numerous water rescues. It rained most of the day and at one point, we received 5.5 inches in 2 hrs.

Thanks. I wasn't real impressed with the looks of the chicken. I think next time I'll add water to the sauce like it called for.

You boys have been tearing it up on the smoker! I tried my first Alabama White Sauce this weekend. I've heard about it for years. I've thought about for the last year. And I did it this year. If you haven't tried it, I highly encourage you to!
