Sounds good to me. I still have peppers. Hopefully I will still have some if I find some hen of the woods shrooms. The ones I pickled had peppers with the shrooms and it was awesome. Should start finding them within two weeks. I have some goose breasts in a brine right now. I am making an stab at pastrami out of the bird harvested from the sky garden. ness Posted October 1, 2013 Posted October 1, 2013 No need to Google: 3 pounds banana peppers 2-1/2 cups cider vinegar 2 cups sugar 2 cups water 1 tablespoon Kosher salt 6 cloves garlic 1 quart sauerkraut Dash red pepper flakes Drain sauerkraut in a colander. Remove tops, core and seeds from peppers. Place in ice water bath for 10 minutes. Carefully stuff each pepper with as much kraut as it will hold and pack into jars. Add the garlic cloves. Bring water, vinegar, sugar, salt and pepper flakes to a boil. Pour into the jars with garlic. Seal and refrigerate for at least two weeks. Makes roughly 6 pints. That's the brine recipe I use, but I don't weigh the peppers and I doubt it's as much as three pounds. Adjust the volume of brine as needed. Gotta keep these refrigerated. John

She's getting bolder around our older dog, who really doesn't want anything to do with her yet. She'll square off with him, start barking, then take off before anything happens. She's keeping us laughing. John

BilletHead Posted October 2, 2013 Author Posted October 2, 2013 hahahah JD This is a mess of seed left over. I put a bunch of varieties in a bottle and gave it a good shake to mix. Then sprinkled the mix in the planters. Now I have a mixed green salad. It is neat though to just graze by the planter just picking and giving each type a on the spot taste test. Ness glad the new pup is keeping you on your toes. ness Posted October 18, 2013 Posted October 18, 2013 We've been getting some cold temps, but nothing too bad yet. Need to get the hoops up this weekend. Still have way more of the cherry tomatoes than I want or need. Two plants was the plan, but I screwed up on a label and ended up with three. One would be plenty, I'm sure. Other maters have been a disappointment this year, but I'm still getting one or two small ones a week. Great year for banana peppers -- pickled another 3 quarts last weekend. I've got two varieties -- the heirloom standby Sweet Banana, and a hybrid called Sweet Spot. Sweet Spot will produce 8-inch long, thick walled, perfectly straight peppers that are good for stuffing. Sweet Banana are smaller but thicker yet, and have a little better flavor. Still getting a few poblanos, Anaheims and red cheese peppers. Picked about 3-1/2 pounds of beans last weekend -- pole and bush. Beets are ready to be picked too. I'll be picking and pickling tomorrow. I didn't get any germination on the carrots I planted a while back, and the fall snap peas are looking like a bust (which isn't really a surprise -- rarely have good luck). I may start some more carrots this weekend. Collards are a tiny because I planted them in a spot that gets too much shade from basil and chard. I'm gonna pull the chard/basil out this weekend and put the collards under hoops, along with cabbage. I don't have the invisible fence collar on the new pup yet, so she's got the run of the yard -- including the garden -- and dug up about half of the radishes and some of the lettuce. I'll get all that under hoops too, and start some more. Still plenty of time for those. John

Best Fall crop I have ever had. They are calling for 36 here tonight and it is 38 right now. Just right to go out and graze on cold crisp greens and a pepper or two. I have one cover for my big beds.. Got a question for you. What do you know about horseradish? Is it time to dig it? Do I wait for the tops to die first? Not sure how the roots did but the tops did well.
