BilletHead Posted October 3, 2014 Posted October 3, 2014 We worked up some gooseberry jam yesterday. If you are going to make a mess it might as well be a big one. So we made two batches and each batch was a double size the recipe called for. So this netted eight pints and seventeen half pints. I think we might of lacked a bit of pectin in the pint batch as it did not set up too solid. Who cares it will be more spreadable. This sweet / sour treat is my favorite jam for sure. Some photos. First one the Mrs. BilletHead needed a stool to get some more height. Wayne SW/MO Posted October 3, 2014 Posted October 3, 2014 I made several jars of crabapple/hot cinnamon earlier. It's pretty good, but very labor intensive so I'm not sure I want to do it again. I did find that a juicer makes a lot of difference. I made some mint apple using some small apples and used a juicer I borrowed. It cut back on the labor considerably. Today's release is tomorrows gift to another fisherman.
BilletHead Posted October 3, 2014 Author Posted October 3, 2014 That sounds tasty Wayne. What I like about jam is its more chunky as apposed to jellies, BilletHead "We have met the enemy and it is us", Pogo If you compete with your fellow anglers, you become their competitor, If you help them you become their friend" Lefty Kreh " Never display your knowledge, you only share it" Lefty Kreh "Eat more bass and there will be more room for walleye to grow!" ness Posted October 5, 2014 Posted October 5, 2014 Still have a bunch of black raspberries and gooseberries in the freezer. I'll do freezer jam with those. I like the simplicity and the flavor -- the downside is the space it takes up in the freezer. John

Njardar Posted October 5, 2014 Posted October 5, 2014 My favorite is peach habanero, not as hot as you might expect, and perfect for a cold morning.
