Nancy and I won't do spicy, but we won't do a whole roasted bird either. I am going to confit turkey thighs, use the turkey fat to pan roast root veg (carrots, potatoes, parsnip, rutabaga) and serve with a tart arugula mandarin orange salad. The only traditional carry over will be dressing and queso. The wife would put me out on the porch if I did not make her dressing and queso.
