Beets = delicious!
I grew up on beets. Mom canned her own. And it was one heck of a process. Since getting older and not wanting to go through the laborious task, she has devloped a very scaled down version that still packs that delicious flavor.
Here is all you need.
1 can beets
1/2 juice reserved
1/2 cup vinegar
3/4 cup sugar
Bring to boil, cool, enjoy
