  4. I've done what you did too. Ill lay the loin down and measure the steaks with the width of the bacon and slice accordingly. It makes a great steak but one has to remember the bacon will never be done at the same time as the steak. Unless it's for my wife. LOL!! I have mostly quit wrapping in bacon. To me, and this doesn't mean I'm right, but to me, it's more more for show than flavor. Just salt and pepper and a few moments on a wood or charcoal fired grill. Heaven in your mouth!!
  5. When it comes to deer and ducks, I enjoy it most on the extreme rare side. Browned on the outside and warmed throughout. Almost like a Tartare. I think you get maximum flavor of the animal like this. People may get squimish, but if you ever try it this way, you'll slap yourself for all the years you did it wrong.

  8. On those tateres, add a little Montreal or Canadien Steak seasoning. Just a light dusting though. They have a ton of salt. I do this for breakfast. Dang it's goooood!

  11. Sorry you have such a bad experience. I usually do some research on what it is I want to buy before he ever go to the store. That way I don't have to try to rely on somebody else's experience or lack on what it is I want. By the time I walk through the door my mind is about 90% made up on whether I want to purchase it or not. I've been to that Cabelas store in Rogers a few times. Maybe the person that asks if they can help me is always on break when I go in there. Only person that to speaks me is one at the front door trying to hock the credit card.
  12. Uh boy I don't know. There are a ton of really super great meatloaf recipes out there. Some more traditional others off the charts! And then you get your smoker involved....!!!!! There's a really great Mexican style meatloaf recipe. With taco seasoning, salsa cheese, peppers, tortilla chips, just fabulous! Speaking of taco seasoning you try this: 2 TBS Chili Powder 1 TBS Cumin 2 tsp salt 1 1/2 tsp Paprika 1 tsp Coriander 1/2 tsp cayenne Beats the pants off any packaged seasoning I have ever bought. And the Aldi brand was the best!

  14. Meatloaf. Few other foods bring back such rich childhood memories with such gratitude and appreciation. So simplistic yet it has a deep, profound, distinct, traditional flavor.
  15. I feel so ashamed. I did meatloaf and messed it up. Yeah! Meatloaf! I was busy with some other projects and when mixing the meat and spices, I neglected to add any ketchup or bbq sauce or any moistener. Though it tasted fine, you couldn't slice it with an ax!

  18. With all due respect, I have to disagree. One can hire any number of guides, like I'm sure you did, to fish any of those waters. And don't get me wrong, I'm not saying they are not great waters to fish. There is a reason they have the reputation that they do. But I would not call them lightly fished. And other than the JD, all are east of the Mississippi River. Nobody mentioned any states west of the big muddy. Could being in the western fringe of the native range have any bearing? Maybe. Maybe not. I do think there is quite a contrast in the size and flow of those rivers you mentioned and those of the typical Ozarks. And I think there in lies a major factor. And that is not to say some Ozark rivers don't compare. A few come to mind.

  20. Not really. I used to get some collectables off of EBay. I haven't even done that in the last few years. I'm just not a big fan of ordering online. Maybe a book here and there. Most of them out of print. There is one I'm looking for now. It's Western Yesterday's: South Park Railroaders; Vol: XI by Forest Crossen. Stuck in the old gen I guess. Im not against automation. It makes life easier. But it comes with a price.

  24. That's pretty much why I quit watching hunting shows years ago. Its all about huge racks on land they saw for the first time the evening before. They are lead to the stand in the morning. Screw that!
  25. Doesn't even compare. Imagine if you will BPS and Cabela's were online only. How many thousands would be out if a job?
