I've been off work for a couple days, and felt like getting stupid for breakfast. Decided to do Eggs Benedict again, because the last version I did with Knorr's Hollandaise sauce left me wanting the real thing. Hollandaise used to be a pain to make, until somebody figured out how to do it in a blender.
Slowly melt a stick of butter on low heat. Start to poach a couple eggs and brown an English muffin. Three egg yolks, a shot of lemon juice, a pinch of salt, and a pinch of cayenne go in the blender. Get them mixed up real good, then go finish up the eggs. Load ham and poached eggs onto English muffin. Head back to the blender, turn it on and slowly drizzle the melted butter in and blend until its creamy. Pour that over your stuff and eat.
Pros:
Tastes great.
Cons:
3 egg yolks plus 2 eggs, ΒΌ pound of butter, ham and English muffin make for a few more calories than, say, BilletHead's granola.
Two pans and a blender to clean.
But, hey, you only live once.
Enough sauce left over to put on some fish and asparagus tonight.
