    Thought this was cool -- Sunday night after the win: Wife's scored an indoor spot at daughter's friend's apartment on the parade route, up the street from Sprint Center. Its 27 degrees outside with wind chills in the teens and snow expected. Think they're still heading down to street level when it starts.

    Yeah, I can cut up a chicken too. Can't say I'm the best at it though. I generally only do it if I'm making soup or fried chicken. I like the dark meat too and the recipe I was making could well have been better with it. The boneless/skinless breast is a compromise, and this is a one pot meal. Wifey and I both work, so we want weeknight meals to come together pretty quickly with minimal clean up.

    So, the bodacious ta ta went into a recipe I did a few weeks ago with a few changes this time. Chunked breast up, dusted with flour and browned. Set aside, sautéed two onions until soft and browned, then added back chicken, chicken stock, apple cider, sage and Dijon mustard. Simmered until chicken was cooked and sauce was reduced. Then added peeled, chunked Granny Smith apples, salt, pepper and parsley and simmered until the apples were just soft. Hit it with a pinch of cayenne at the end just because it needed a little something. This was much better this go around. Would have been nice to serve over rice, but trying to keep the carbs and calories down. Changes: Peeled the apples, bumped up the Dijon, added a pinch of cayenne.

    Yeah, I hear you on that. We needed chicken breast for a recipe and it was pretty slim pickings at the store this weekend. So, do you uaually buy a whole chicken? We’re usually trying to keep prep time manageable, especially on weeknights, and like the convenience of breasts.

    Yeah, Zarda’s is good stuff. They don’t get enough attention. There’s a handful of places that get all the press. Good for them, but there’s a lot more. Johnny’s is a good one too.

    The first 50 minutes were pretty hard to watch. Seeing this team that has such an explosive offense sputtering kinda sucked, as did seeing the 49ers pretty much move the ball at will. But the Chiefs showed incredible grit and just didn't quit. Again. Seems like a pretty special combination of things all came together at the same time. A talented and exciting QB, a great coach, tons of other talent and a city that has patiently waited for a loooong time for this. Loved Reid's quote: "I'd coach another 20 years if I could have that group right there." Mahomes is such a good kid -- well grounded, always deflecting the attention to his teammates and coaches. He does a lot of charity work around KC, especially with kids. Reid is a class act and much beloved coach too. Big parade here on Wednesday. I'll be here at the old salt mine, but wifey's school declared a 'Red Snow Day' for Wednesday and she'll be down there like she was with the ~300,000 folks that celebrated the Royals World Series win.
