More good eats from the BilletHead household, We decided to grill a couple sections of venison back strap. Marinated in a teriyaki type sauce and I sliced a whole head of garlic in the mix. This was by design. We all know how dry venison can be and the sweetness of the coated meat crusted over quite nice helping seal in the natural moisture. Soaked the meat for about three hours and put on the hot coals with some hickory sections., The smaller piece came off first when it hit 145 in the middle. This gave it rare on the fat end and medium on the thin end. As I worked on the bigger section the Mrs. let me do the taste test . Pretty darned good and moist with juice running out after a short rest. I finished the other stopping between 140 and 145 then pulling it off for a rest. After resting sliced and plated with yellow potatoes and some sautéed oyster mushrooms found Friday. A nice big salad that had cubanelle peppers from the garden. A glass of the rest of the gifted fermented grape juice from the Folly family. The field and forest has always been good to the BilletHead's and here is to hoping it still is that way in the years to come, BilletHead

Green Chili Deer Burgers, Fresh out of hatch chilies so I roasted and charred some jalapeños right out of the garden. Slipped off the charred skins, split open and scraped out the seeds and membranes. Still pretty hot but good flavor. Needed some fat for the lean ground deer so we bought a pork butt roast. Trimmed off the excess fat and ground it to add to the deer. Did the burgers on one side, flipped and put on the pepper then a nice thick slice of sharp cheddar, Plated and dressed the burgers. I have a happy belly now and there will be burgers to eat all week , BilletHead

I too grew up listening and watching them. In 2008 we went and seen them at the Juanita K Hammonds Hall At SMS in Springfield. A great show and included a performance by the Yo Yo Man . BilletHead

So while wondering around aimlessly in the woods behind the house yesterday I found some oysters. Went back today and they had doubled in size overnight, The picked pile, Then decided to prowl around another place and found a Berkeley's Polypore. It has grown here for at least three years at the base of an old rather large oak, Years before when I found it tough and too far gone. Today I sliced off a piece of tender edge and brought it home, Sliced it up and began to sauté it in some butter. A sweet nutty smell began to envelope the kitchen. Really smelled good, Taste test went real well and tasted just like it smelled, Went back and cleared the wood and debris. Then cut off what was viable to cook for the Mrs. When she gets home. This Shroom is BilletHead approved and will not pass up another that has tender edges, BilletHead

That and when we go west we see lots of bells in the piles of bear poop mixed in with seeds and nuts. Not sure if that was natural or from granola bars, BilletHead

Generally Amazon. You can get some pretty lightly used for a bargain. I have a small library built up now but will not be getting any more. There is an almost infinite amount of stuff now on the web. BilletHead
