Terry Beeson Posted April 10, 2008 Posted April 10, 2008 OK... I recalled a dish I had a few years ago and decided to give it a try... Came out pretty good. So I thought I would share. Now, mind you, I'm not one of those "recipe" types. I add a bit of this, some of that, and a dash of the other... So the amount of spices is not exact and is up to you.... to taste. 1/2 stick butter Olive oil (about 4 Tbs) 1/2 cup or so chopped onion Minced garlic to taste 1 qt half and half 1 can tomato paste 1 Tbs Italian seasoning (or oregano, basil. parsley, thyme) 1 tsp ground red pepper 1 tsp paparika 1/2 cup ricotta cheese Melt butter and olive oil in sauce pan. Add onion and garlic. saute until onion is translucent. Add the rest of the ingredients except the cheese. Bring to just a boil and reduce heat. Simmer for at least 20 minutes on low. Add cheese and stir until melted. Now... Take your favorite pasta and some cooked shrimp - peeled and deveined. Small shrimp are best. Plate the pasta, top with shrimp, then pour on the sauce to your liking. Of course, a nice Chiante to go with the dish is nice...
