Flatheads have the reputation of being the best tasting of the catfish and taste good even when large. I would err on the side of caution and selectively harvest the smaller flatheads (< 10 lbs) and let the bigger fish go to reproduce and thrill someone else.

I've caught a few flatheads while bass fishing, but have not chosen to kill any that I have caught. I tend to keep the smaller channels and blues for eating. Again, I prefer to keep the smaller fish becuase I believe they taste better.

Flatheads aren't good to eat at all.

And they are a real pain to clean too.

I'll be glad to take those ol' nasty fish off anyones hands who happens to catch them.

You know...just trying to help my fellow man. ;)
