Root Admin Phil Lilley Posted March 23, 2011 Root Admin Posted March 23, 2011 What do you guys use for your blackened recipes? Sams used to carry a blackened spice that was great but I don't see it in the stores or online anymore.
snagged in outlet 3 Posted March 23, 2011 Posted March 23, 2011 Old Bay. Emeril has one out too. SIO3
rps Posted March 23, 2011 Posted March 23, 2011 Use Old Bay as the base plus add salt, coarse black pepper, a pinch of cayenne, and some onion and garlic powder. Bet that comes close to what you want. For a change, add the same ingredients to Jamaican Jerk Seasoning. Third variation: start with Cavenders Greek Seasoning. Bon Appetite.
jdmidwest Posted March 24, 2011 Posted March 24, 2011 I always just buy a spice mix called Cajun Seasoning, its a mixture of Paprika, Garlic, Cayenne and others. A good spritz of spray butter and a coat of the spice mix on a hot grill outside because of the smoke. Wayne SW/MO Posted March 24, 2011 Posted March 24, 2011 Like JD, I like either Cajun or a Creole seasoning. If they aren't warm enough a little Chipolte or Ancho powder will cure it. Today's release is tomorrows gift to another fisherman.
