I once posted a request for a stone barbeque pit plans. After more investigation (money, time, etc.) I bought a Weber Bullet to stand beside my Weber kettle.

Right now I have 8 pounds of spice rubbed beef brisket smoking in charcoal and hickory at 225. I will put together a potato salad and some dilled cucumber slices this afternoon.

Which leads me to the reason for this post.

What are your favorite "sides" with grilled or smoked meats? Are you willing to post recipes for these?

For me it's baked beans cooked under some fat dripping meat in the smoker. And cole slaw, but not on my butt.:rolleyes:

I like to make what I call a smoked potato salad.

Brush about 4 taters with bacon drippings. Grill for about 1 hour or until they feel soft. Which ever comes first.

Keep an eye on them as you don't want them to burn and get black on one side. Just keep turning them occasionally.

When done, put in a bowl and mash up to your desired consistancy. I like mine a little chunky, the wife likes hers whipped.

Mix with your favorite tater salad mixings. I use bacon, green onions, black olives, roasted red peppers, 1/2 cup miracle whip or a dressed up ranch dressing, spicy brown mustard salt and pepper to taste.

For best results, as they say, make a day a head of time. It just gets better everyday its in the fridge!

With smoked beef I like chunked up potatoes cooked in the oven and asparagus and squash grilled along with some tomato slices.

I like fresh squash from the garden coated in olive oil and seasoned with Cavender's Seasoning on the grill.

Some new red potatoes chunked with the skin on, broccoli, vidalia onion, Mrs. Dash and butter wrapped in foil and cooked over the coals is always nice.

Fresh corn on the cob, silk removed but the shuck retained, buttered then cooked over charcoal is nice.

Lots of stuff works great....usually do the meat ahead...figure brisket goes for about 8-10 hours, pork butt...12-16hours...a simple cole slaw works really well in addition to baked beans..Watermelon Salad...etc...

Simple Slaw...

Usually do it with green & purple cabbagge, and some grated carrot...basic dressing

1c Mayo

1/4c Sugar

1/4c Rice Vinegar

2t celery seed

S&P

Adjust Vinegar & S&P to taste...

Always a hit...

Watermelon Salad...

Bought 1/2 a seedless watermelon....

Can of mandarin oranges, drained mostly

Bunch of fresh Basil well chopped.

Dressing..

Red Wine Vinegar & Olive Oil...50/50 mix

splash of juice from the can of mandarin oranges

S&P

Toss, then top with crumbled goat cheese.

A side from last nites spare rib cook.

Fried Cabbage ..

5 strips thick cut, peppered bacon

1 sm/med head of cabbage

1 onion

Hard fry the bacon. (you want it to be cooked enuff to crumble)

In the same pan add rough cut cabbage to the frying pan.

Add rough cut onion to taste. Use a lid on the frying pan. Cooks faster. Turn the cabbage often so it doesn't burn. Takes about 20-25 min..

Add in crumbled up bacon.

Enjoy!

Garlic Bread, corn on the cob, sweet potato fries, grilled potatoes (sliced, in foil with butter, add salt and seasoning after cooking), german potato salad (sliced/peeled potatoes, diced bacon w/ a grease roue, vinegar), or my personal favorite- fried bluegill fillets. Some people like salad, but I think salad isn't food- it's what food eats.
