Has anyone slow smoked squirrel before? I didn't know if there was enough connective tissue to gelatenize and keep the meat moist.

Sounds good, you would have to smoke cool and slow or it would dry out. Try parboiling first then tossing it on a smoker for flavor.

In college, I managed a BBQ joint and we did a mess of coons for a benefit wild game feast. They are full of fat and the grease kept them moist. There is alot more meat on the coon than a squirrel has.

Been watching several in the yard and have been craving squirrels, but I can't get past the ticks on them this time of the year. It tends to ruin my craving for them.

Everytime I see one run over or out in the yard I think $17 for a dyed stripped up squirrel pelt. Have my first one tanned but not dyed yet. If it turns out good then the price of my material for PMS's and Hibinators just went down a whole bunch.

Think youll end up with squirrel jerky if you used whole squirrel...If I wanted to do it...I'd probably go with a squirrel stew. Mix up your stew then cook it in your smoker so it would braise and smoke at the same time. Good luck.

Gavin, you're probably right. When I lived in Kansas, I would wrap pheasant in bacon and cook it in the oven. Last ten minutes I would uncover the breast and baste it with honey. I wonder what would happen if you wrap the whole squirrel and smoked it. I still think it would be dry because there wouldn't be internal juices. No big deal, just brainstorming anyway. My wife won't eat it, so I cook it for myself. I'm with JD, I'll wait until the fall.

Actually, I am going to start smoking the little tree rats come daylight in the morning, Came home today and found 1/4 of my sweet corn cut off at the base and laying over in the rows. Game camera revealed the culprits, a whole gang of them. The war is on.

We had an overpopulation last year. Had to smoke a few out of the garden as well. I discovered that crows and buzzards really like "lead smoked" squirrel.
