I got a warning once for ripping the breast out of the phesants I was cleaning and throwing the rest away. He said he could give me a ticket for wasting the legs and thighs. Have you ever tried to eat a phesant leg. This happened in N.W. Mo. a few years back

what a joke. silly officer, dont they know nearly everyone only saves the breast. sounds like an over zealous officer.

what does a person do to make white bass edible ? I have tried to eat them and found them to taste pretty bad.. I've tried to cut the dark part off which I found to be a pain.. some people say put mustard on them and then they are tolerable. tried that too and they still take " not so good". I just through them back but I love the they fight..any help would be appreciated.. thanks

To make white bass edible this is what I do. First I gill my white bass just before leaving the water. Either with a pair of pliers or with something to cut through the gills. This removes all of the blood from the meat. Then I fillet them and put them in water. Rinse them really well with a garden hose or massage the meat real well with your hands which helps get the oil out of the meat. After a day I pour the water out and add water again. After 2 days of soaking, I skim the red meat off the fillet, then proceed to cut the center red line out of the fillet. Some people add stuff to the water when cleansing the meat, but I've never needed to.

I make sure to clean them very good (as I am sure you probably did) and then cut the fillet down the blood line, then remove the blood line from each half of the fillet. I will let them "Marinade" in frenches mustard for 15 minutes, and use that wet mustard on the meat as the binding agent for my coating/breading. Drop in frier, cook appropriately, enjoy. My family (wife and 3 kids) actually prefer white bass to crappie...maybe we are the odd folks out.

I haven't eaten white bass in years. I really didn't care for them, but I am glad some people do and are able to take advantage of this fishing resource. Over the years I have tried numerous ways of fixing fish. Recently I tried dipping crappie filets in melted butter, heated up a cast iron skillet really hot , put blackening seasoning on filets and scorched each side in the skillet about a minute each side. I really liked the taste and texture this way, although it's nearly impossible to mess up a crappie or walleye fixed however you prefer. I don't like to soak fish in water, rather just make sure they are rinsed clean and FRESH out of the lake.. I think the meat soaks in way too much water if they are left soaking for a day or two.

Cut all the Red meat out (obvious), soak in salt water for 24-48 hrs. Draining once. Take the fillets and coat them with lemon and garlic pepper, also use some cajun shake if you like a little spice. use a half stick butter cut into slices and place them between fillets. Bake at 350 for 15-18 min or until done and serve over you're favorite rice. I usually cook asparagus along with it. Put the filets on a cookie sheet or Corningware dish. Tastes pretty darn good to me

Crappie Jerk,

Read the post "Headin to Aldrich ( It will be a Traffic Jam)" on this website. It is only down the list a little ways from this post. There is a post written by Walcrabass ( that's me) and it truly works. I have done it for years. I also saw a cooking recipe I am going to try on them soon.

Put filets in skillet, squeeze lemon juice on them, add salt and pepper, add Olive Oil, sprinkle on bread crumbs, place a little parsely in juice in skillet. Bake in oven until done. Sounds like a good one for White Bass!!!
