lmt out Posted September 5, 2017 Author Posted September 5, 2017 When I clean the walleye I just take the side off the fish like your going to filet it except instead of take the filet off the skin I leave it on. The wife smokes it for 2 hrs at around 225 to 250. Salt, pepper, paprika and garlic. She loves it I am not much of a fish water. terryj1024 1
Dutch Posted September 5, 2017 Posted September 5, 2017 That is basically the way I do it also. I remove the lateral bones and the rib bones before it goes on the smoker. I baste it with olive oil before adding seasonings. Crappie 13" and longer also smoke very well. bfishn 1
