I have personally eaten beaver, and I must say it depends on the beaver, young beaver is mild and tender....but old and IMHO fatty beaver is strong and not as pleasant .....so get out there and gets some tail to try

I have grilled beaver tail until the skin blistered up, pealed it off, seasoned it and eaten it.  It was sticky, fatty and not that good.  As for a your beaver cut up like a big squirrel, browned in a skillet and steamed for a while with some veggies added, heck yeah I would eat it.

had some beaver stew once they guy that made it said the trick was parboiling the meat to get rid of the grease, then lay it on a bed of potatoes and baby carrots and cook it 12 hours on low in a slow cooker...was very good
