    What's Cooking?

    Fresh ground is the way to go with burger. Usually pick up well marbled chuck roasts on the cheap and grind, or cube for chili. Tonight we are grinding some pork loin to toss in some spaghetti.

    Y’all have to much time on your hands! Looks great! Simple meal of sausage, kraut, & homemade mashed tonight. Cheap, easy, and so darn good.

  6. You need no permission to camp on gravel bars in MO, but ONSR is shut down to camping and they might give you a ticket. We had 5-6 days planned for a turkey trout trip this week but canxed it. Upper Meramec might be viable, lots of rain in the forecast though. Hope not a flood year. Very little fishing last year.

  9. Looking for a tandem canoe BTW, 17’ Royalex Wenonah Spirit II preferable, but will consider others. Ins Co paid well for it.
  10. @Coldwaterfisher Sorry for your sick in-laws. Please drop the politics. We all know that American Politics are a disgrace at the moment. I come here to think of other things. We were supposed to be floating, killing turkeys, catching trout, and getting drunk today. Well I’m drinking bourbon at home, and a tree fell on my tandem canoe. BTW, you still owe me a bottle of scotch from the bet you made week before Trumps election. You said no way, I said cant see it not happening. I do not support him, but it’s been 3 yrs. Bring some Balvenie Double Wood next time we get together.

  12. The drop, drag, and drift downstream works really well too. dry fly or with a bobber for weighted flies. Will need to feed line and mend after you drag your candy into the drift line.
  13. Dink creeks mostly. Courtois is more fun to float. Huzzah is a little bigger and less curvy. Both nice floats but usually crowded near Bass, Huzzah Valley, and Ozark Outdoors.
  14. If your in the sticks your test results will take longer. Awful stuff according to one of my ER doc clients that I talked with today. Total up with the PPP loans. Each bank got a loan limit, and I think that many processed their better customers first. Have one that got funded, 4 approved and unfunded, and lots in early and likely never looked at at the banks.

  16. Read Joe Humphries Trout Tactics, approach quietly., hide, Sun at your back, but watch your shadow. No more than 2-3 casts to a spot you think holds fish. If you see a good fish back off and figure it out. Once you have plan, refine it between casts. Don’t flog the water.

    What's Cooking?

    I don’t normally cook much this time of year, usually working 60+ until April 10-11 but only 45 a week for the last 3 weeks. Have been cleaning out the freezer vac pacs though! Pulled out some ribs for a couple dinners, and some smoked round roast for a dinner and sandwich slices last week, Pulled out a bunch of home made lasagna last weekend. Wife thawed a 3 lb chunk of pork loin & ground it for enchilladas on Monday, Was better than chicken. My turn tonight. Bag of halved Cornish hens I cooked for a dinner party last December, must go steamed green beans, boxed mashed tater, and the emergency cranberries from the fridge. Frozen bag of halved pre-cooked hens got dropped in a big pot to simmer for an hour, then out of the bag, and into a pre heated oven while the sides cooked. Was good, except for the boxed mashed taters. My 10yr old complained, but ate em.
  18. Semi aquatic rodents from South America. They get bigger than beavers, breed rapidly, and tear up wetland habitat in LA. Never ate one, but have eaten coot. Coot is good, but breast out immediately, remove a skin, and fat.
  19. Not sure if this stuff is lab created, but thinking likely not. The Chinese Government is despicable, but likely not THIS despicable. I’m sure they lied, but they always lie, and we were not paying attention. They turned it to their advantage for sure. They will pay for it down the road.

    Asparagus?

    Usually just steam it in a ridged bottom Ceramic casserole type pan with some fresh lemon. Maybe 1/4” of water in the pan. Add glass lid. Water turns pink it’s done. Or steam, shock in an ice bath, then dry. Wrap with cream cheese and prosciutto, serve as a cold appetizer.
  21. Why not stay out! There are are only 1-2 ambulances in those counties. Usually figure your screwed if you can’t last until you get back to STL, KC, or Springfield..

    Mustard looses flavor when heated. Use yellow mustard on Pork butts to smoke. Can’t tell any difference vs oil. Use what is cheaper. Mustard is usually cheaper than the EVO I use.

    I do like RPS, season the fillets, then bread. Depends on the thickness of the fish. Most that I keep in MO get Andy’s or similar. Will beer batter thicker cuts of flaky white fish (halibut, grouper, or similar).
