  1. Can't overlook the fact that while the sportswriters may not evolve their criteria, the computer will. We're starting to see a gap in the polls because the computer is reevaluating it's criteria. I watched OK real close and they have the personel to be #1 and the early season rankings were legitimate, but time is revealing they have some people prone to mistakes and when you play good teams they will jump on thoses mistakes. I suspect there are others, AL, OR and TAMU for instance. When these teams have to prove themselves several times a season it shows, while teams that play the creampuffs can hide their mistakes because they don't play anyone who can take advantage of it.
  2. The problem is that the colleges aren't that interested. Fans would like it, but it's not necessary to higher education.They get the bowl money no matter what the format is. There are some interesting games this weekend, maybe more than bowl games. Baylor & TCU and Auburn and Miss St, plus some closely ranked teams
  3. The computer is probably the fairest, even if it's not perfect. I'm old enough to remember when the south and midwest didn't have the population that the upper midwest and the west coast had. It was a lot harder than for a big 8, SW conference or some SEC teams to get a crack at the National.
  4. Well the picture book I looked at had a machine that had big rollers, Kind of like the old Maytag Ma had when i was a kid. It said it was they best way to get a low moisture thin crust? Actually the roller I use is one that has a 2 1/2" slightly rounded roller on one end and an even diameter roller about 5" on the other. I put the ball of dough between the parchmnet and flatten it with my hand until it's well started. I then use the longer roller working from the center to enlarge the crust to about 13-14". I get a rim that rises because I don't run the roller over the edge at the end. This is the only way I've found to get a raw crust about 1/8th. I than pull the top sheet off and leave the crust on the bottom parchment and pop it in the oven for 5 to 6 minutes.This sets it and makes it easy to use after I removed the bottom parchmnet and allows it to really get dark when I put the finished pizza back in the oven. I have a recipe that they recommend you use a commercial rolling machine for, but while it's really good, it's too much work kneading and rolling out.
  5. Most places that have a thin crust roll it. They use a low moisture dough and run it through a machine. I simply put my dough between oiled parchment and roll it real thin. I'm not into the Old World focaccia crust with basil and mozzarella, maybe a sliced Roma for color. When I go chewy thick crust i go all the way, deep dish. I don't see the cracker Ness? It's still chewy, just not bread. Nothing like Imo's, which I've made once and eaten from the place once. The "crunch" from the semolina isn't the same as the cracker. at least not to me. I do like it in deep dish especially well.
  6. No I understand that the hosting bowls are set. The advantage, which I'm sure most will scoff at, is that #1 plays no #3. I doubt that is really any advantage at the end of the season. Unless of course some teams sneaks in on a one win effort after playing also runs all season.
  7. We ran into a couple below Elephant who had stopped to put out corn and salt at their stand. They said there were a lot of hunters who came up the river. They had a well loaded 18' Disco with an electric on it. They were also going to camp and try to fill a cooler with cats for a fish fry. They told us low water was prefered in the Fall by most of the locals because they walked the shoals and then use electrics to get through the holes. Budman I haven't heard of anyone who said they really did well down there. I'm sure a few have, but overall the solitude and abundance of great gravel bars, not to mention the scenery, makes the trip worth it.
  8. I tried the sourdough route, but just didn't think it was worth the hassle for me. I've just settled on Saf yeast. I bought one from KA and I also started one from scratch, but didn't like the baby sitting and frankly couldn't tell that much difference in the end. I can't see the brick oven, at least not for once every 10 -14 day pizza? I use a 14" Lodge pizza pan as floor and a tile above it for my oven. I set our electric at 500 and I pre-cook my crust for 5 minutes. I use a peel to drop the pizza on the cast iron and to remove it, they CI pizza pan never leaves the oven. The dough can make all the difference in a pizza and I think it and concentrating the heat is the key. My dough at present is about a 50/50 KA bread flour and semolina rolled as thin as I can get it..
  9. I'm not sure about the Miss state ranking. There is a difference of opinion and probably should be because TAMU was likely overrated, reference AR. Notre Dame will stay up to give sports writers something to write about, like the upcoming FL ST game. TCU was underrated and I had a feeling they would be tough. They were wiping out all the lowly teams and they have a good program, so it was hard to say where they should have been ranked. Auburn has everything going for them except the wins. If they win out they will be undisputed #1 seed. I look for ND or FL ST to be #2 because they only have one more game in their schedule. If Baylor, or TCU, survives the Big 12 undefeated they will likely get a seen in the 4, but it will be a long road to get there, as long as Auburns. Ham the SEC West is like the Big 12. It's almost impossible to go undefeated because there isn't enough spread in between the teams. Fully 3/4 of the teams in either conference can beat anyone of the others, top to bottom.

  11. How true. I look for Notre Dame to make a jump along with Baylor, Ole Miss and Auburn likely to move to the 2-5 spots. With all the turmoil I'm not sure any team with a loss can move past an unbeaten because of the win qualities of the unbeatens.
  12. I would speculate that they wouldn't likely go beyond the first shallow riffle they come to. They don't seem to be migratory, only opportunistic. The problem I see is that if they gather in large numbers at the first obstacle then everytime there is a flood they will move farther up and start multiplying.
  13. I agree as I said that the menu, minus the specials, looks much the same and the quality was just as good. Staff looked completly different in the evening. My whole reason for the original post was concerning price and the elimination of the specials. If they specials are on the menu then they are back. We generally jumped on the specials when we went and we often went on Friday for the catfish. Being local we noticed the changes that most wouldn't remember or know about.

    I have to smile at the logic. You are more than ready to start Brees, 1-3, cause it ain't his fault. Brady, cause it ain't his fault. But Smith isn't that good, even though they were short one of the best backs in the league and a patched up offensive line that wasn't even that full patch! The logic escapes me. I don't kniw exactly where he falls, but he took SFO most of the way until he was hurt and this yaer he's working with a game plan that is in constant motion and making it work. I haven't forgotten that they took Denver to the wire and Denver probably has the best QB I've seen and I can start comparing with the Likes of Bart starr, Johnny Unitas, Don Meridith, Len Dawson, etc. Time will tell where he deserves to be, but today it's wild speculation.

    That sounds like the ESPN bs ranking. The big hole in their rankings is it's based on how much the QB contributes to the scoring. If you have mediocre running backs a QB might gain more credit for a win. On the other hand if you have a Jamaal Charles he might not get near as much credit because a handoff doesn't count for much. I think it's hard to rank them beyond the whole team, period. There's no doubt that P Manning is outstanding with a good team. In the same light is Drew Brees a poor QB? Athlon ranks him 4 ,I believe, and he's 1 and 3 in the win department. Athlon ranks him 17th, which is ahead of Flacco and E. Manning. My point is that it's hard to rank them. Each QB has his own challenges. Reid runs a complicated and ever changing offense and it's hard to predict how anyone QB would respond. Smith seems to be making it work for KC.
  19. I made several jars of crabapple/hot cinnamon earlier. It's pretty good, but very labor intensive so I'm not sure I want to do it again. I did find that a juicer makes a lot of difference. I made some mint apple using some small apples and used a juicer I borrowed. It cut back on the labor considerably.

    I think it's hard to say with KC. KC doesn't have a WR that can fly and their #1 receiver could play tight end in a pinch. I'm not saying he can make real long throws, but I do think it's hard to know what his range is with the current targets. People often dis a QB for a big miss when in reality it's a no option play that he knows is too dangerous to try and complete.
  21. Don't know, but I do know the last time I was there in the evning, probably a couple of months ago, I saw no familiar faces, no specials on the menus, and the prices had increased. I just assumed big changes, I thought dropping the specials was big, and new faces possibly meant a change of hands. If the friday night fish fry is still there then it has been returned because it wasn't there last time I was there.
  22. I based the sale thought on the fact that the guy patrolling the register was new to me, as were all the servers. There were no specials either. When I say specials I'm talking about the standard every week day specials that were offered on certain days.
  23. I'm not a big fan of kds and 410's. the pattern is pretty thin if you reach very far. I'm surprised at the 20 gauge kick and I would imagine it's just a poorly designed stock. A 2 3/4" 7/8 oz 20 shouldn't kick much harder than a 410 and would give a youngster more options as he grows.
  24. The last time we were there there was no friday night all you can eat cat. Broke my heart too.
  25. Now how does that big cat prove your point? You have to catch a bushel basket load of panfish Mic, not of cats, to qualify.
