    A little help here guys. From time to time I see posts on here where you smoke large bologna. These are not for sale locally. Where do find them? Is a Harter House a good possibility?
  3. That flat has several good bumps and the rock fence I posted about last summer. The hump after you go left then right can be good too. Especially at vertical spoon time. The section next up river, after you turn back left and need to turn back right, is excellent at several different times of the year. I am not a jerker (though I would like to learn) but I suspect either the trees or the steep submerged timber on the other side would be good.

  7. I feel privileged, and you are correct. Never had a coon or goose problem yet. Did have a thief. And the sum is still plus. I do hope to avoid goose or otter poop duty, though!

    I wish it had avocado! Around here ripe avocados disappear before I get to the market. Eureka Springs sits at the end of the food delivery chain. We rarely see prime produce until the farmers market opens in the Spring. Even that does not help with avocados. Dang, now I am hungry for guacamole.

    Beef soup/stew. Vegetables with onions and farro. Pita bread on the side.

    Hash comes from the French "hacher" which means to chop, usually roughly and finer than the picture. When I make hash for myself, I use the large holes on the box grater for the potatoes, I mince the meat and onions, and I fry the result. I still top with an egg. However, my beautiful wife prefers a baked hash and favors the larger pieces. You will note the picture shows who actually controls the house, even if it is my kitchen. I will say the halved Brussels sprouts were better than chopped would have been.

    Odd duck meal tonight. Beef hash with leeks, carrots, and Brussels sprouts. Finished with an over easy egg.

    When I was born, Father believed I should have an "impressive" name. He himself was Kenneth Leroy Stainer. He chose Randolph Preston Stainer. No relatives, no celebrities, and no family names included in that one. In my former life, when I had to sign many documents, I began to use rps as the signature. Thus the screen name. Except in England, I have gone by Randy.

    I have posted about this dish before. Only variation this time was chicken instead of burgers. Mexican surprise with queso.

    Provided interior pests, such as worms and mad cow, do not exist (a function of the FDA presently on furlough), major cuts - steaks, roasts, shoulders - aren't really the risk. So long as you sear, roast, or cook the exterior to a germ and virus killing temp, you should be good to go. Ground meat, on the other hand, is a different story.
