    The salad is asparagus I blanched and then chilled. Tomatoes, salt and pepper, Extra virgin olive oil and balsamic vinegar. The unidentified matter at 2:00 is cous cous. It is a very small pasta that cooks so quickly that all you do is add boiling liquid and cover it. I used chicken broth. I chose it because it is wonderful with a good sauce or gravy. Of course I added a little shallot and mushroom as well.

    Seared and into a 275 oven for 60 to 70 minutes. The extras you see are shallots, garlic and rosemary that wind up flavoring the pan gravy. It smells so good I almost want to snack while I wait.

    You citified folks do not know what you are missing. Over easy eggs fried in bacon fat until barely done. Brooks spicy ketchup on top. Break the yolk and let it run into the ketchup. Wipe the plate with toast. My lord I can see my father doing it, and I can taste it as well as the day I remember. Unfortunately, now days the wife won't let me keep the pot of bacon fat on the stove top and my doctor wants me to eat one egg a week.

    This will be a several stage series of posts. I have finished stage one. I butterflied a pork loin, seasoned the interior with salt, sugar, pepper, and a seasoning rub. I folded it on itself and let it sit for three hours. I opened it back out and used parsley, basil, Parmesan, capers, lemon juice, lemon zest, fish sauce, and home made garlic oil to make a paste that I spread over the seasoned side. I left 1" borders. Then I rolled the roast and it went back in the refrigerator to rest and season for a couple of hours.
  9. Blitz: Thank you for a careful reasoned opinion and response. That kind of participation is welcome by all on the board. I do not know beaverbeater. The others I have met or have corresponded with for so long I feel I have met them. From things you said and hinted, I assume that you may not post often but you read this forum very often. That is good, very good. If you have done so, I am sure you have noticed that this forum differs from many (most?) in that good manners are the rule and not the exception. I suspect beaverbeater received the responses he did because he did not act within the "accepted range" of this board. Beaverbeater: Just a comment. I was taught you don't join a conversation by telling a man his mule is stupid and ugly.

  11. I had an Express modified V center console that was great, except for the pounding I took on windy days. On Taneycomo you don't have that worry. G3 makes one similar. Ignore the jack plate and tunnel hull options and look at this video.
  12. In the 13 years since I moved to HI, the debris has never been as bad as it is now. The flush from the runoff combined with the steady North wind pushed everything from Leatherwood and much from the upper White into the marina pocket. Even if we get a week of south wind the land will block and the marina itself will block it. It will sit there until removed. I posted pictures in an earlier thread.

Once you know the category/genre you can appreciate the skill with which it is used.

    I have been bachelor cooking for several days. Tonight I rebelled. I made a chef type salad with smoked turkey, shrimp, hard boiled egg, potato, onion, tomato, all on top of great leaves. I made a home made dressing best called a creamy sweet and sour chive dressing.

    I see a pattern as well. Great direction. Orson Welles once said he learned from the three greatest directors in Hollywood. John Ford, John Ford, and John Ford. Obviously he is in the group, as is Spielberg, Capra, the Coen brothers, and, I think, Eastwood. David Lean wasn't too shabby either.

    No I trimmed it with dykes. I started with the 1/4 ounce and trimmed the front stick out part off to where it was about a 1/8th.

    You have three of my top five on your list. The two John Wayne's, The Quiet Man and The Searchers, and my number one, To Kill a Mockingbird. Apocalypse Now is in my five as is Casablanca. Lawrence of Arabia is a near miss. For a real change of pace worth thinking about add Million Dollar Baby.
