Nancy and I are old farts. We cannot make it to midnight. However, I did manage to make a decent New Years Eve meal. The wine - Sofia bubbles The appetizer - mussels in a wine broth The main - butter poached lobster tail (via the sous vide) The side - sauteed broccoli rabe The dessert lemon pie gelato

Last night I forgot to post dinner. Tried something new based off a New York Times recipe that I decided to change. The side dish is chickpeas, tomato, spinach, onion, and garlic with turmeric, cumin, garam masala, and a golden curry blend. The garnish is feta. I overcooked the skirt steak. 30 seconds can make a huge difference.

One November, I was invited by my mother in law to fix Thanksgiving at her house. Her husband, John, passed away about two weeks before then. My father passed away the week before the holiday. My wife and my MIL let me escape into the holiday preparation. I did a turkey galantine with a rice and mushroom stuffing, a pate from the liver and gizard, and a medley of my family's and John's family favorites. I am not Jacques Pepin. It was a pain in the posterior. It was also a time shared with family I cannot repeat. Sorry. That was probably too much reality.

Creamed spinach may be too moist. Try a spinach/ricotta mix with bread crumbs.

Max temp is 208 at sea level. Do a generous salt and pepper rub, take it to 202 in the sous vide, sear it, and then slather it with your favorite sauce.

Make life easy on yourself. Use a double palomar. Tested as the best by Tackle Tour and I have used it for years trolling braid for walleye. Never breaks at the knot.

Use the sous vide to confit a chicken, then fry the skin like bacon. Chill the meat and use it in a salad where you sprinkle chicken bacon bits over it. At Thanksgiving, I used the sous vide to hold the mashed potatoes at service temp while I finished other dishes. Sous vide your roasts and steaks to your perfect temp and then sear them for color. Butter poached lobster from a sous vide is incredible. Just do it.

I've never cooked cat. Do you roast it, braise it, or use the sous vide?

Many people clip the hooks at each end off. They love to hang up and rarely make a difference. Think about it.

My goals are simple. I have found the drive to Skiatook Lake too long to be fun. The fishery compares poorly to Tablerock. I have been spoiled. Goal 1: Sell the boat. Goal 2: Book trips with quality guides on superb waters. Bill on Tablerock. Buster on Bull. ? on the White River below Bull. ? on Grand Lake. And so on. I figure it will take me 5 or 6 years to use the proceeds from the boat. At 70, that is not too bad. Bill Babler, give me a save the date in late March, late April, and late May on Thursdays or Fridays. BTW, who wants to buy a Lund Rebel XS Sport with a 90 HP Evinrude ETEC, Ulterra TM, and decent graphs?

Sorry old plug. I am afraid I will have to call you on that. If judges were voted rather than appointed, Plessy vs. Ferguson would never have been overturned. Separate but equal would still be the law of the land. I don't think you would want to go back to segregated schools, water fountains, whites only and such. You will remember that following Brown vs. Board of Education of Topeka Kansas, Warren was vilified by the conservatives. You probably remember the John Birch Society billboards. Without his independence, we would not have one man = one vote because Baker vs. Carr and Reynolds vs. Sims ruled states could not make voting districts with different size populations. Without his independence, we would not have Terry vs. Ohio. That was the case that ruled the police could not search you unless they had reasonable suspicion you were committing or were about to commit a crime. Warren was a Reublican that ran as Dewey's vice president candidate in 1948 and was governor of California. Eisenhower appointed him. In other words all the things you proposed to change about the SC were true of him.

You are absolutely correct. However people are not born knowing how to perform CNC machining or even stick welding. The quickest way to learn those things is school. That is why the Eureka Springs schools maintain a building trades and supports a high school program at a multi district location. That gives the students a head start. However, the choices are not school or no school. The choice is what kind of school.

Gentlemen, I have a BA in English with a minor in political science. The institution I attended was and still is considered one of the most effete, liberal, and expensive schools in the United States. (Edit: I went on scholarship and only had $10,000 of student loans.) Do you realize how offensive , incorrect, and tiresome some of your remarks have been? Talk about stereotyping.
