    What's Cooking?

Fish tacos , well dome RPS, Today we had fresh sweet corn from down the road, green beans the Mrs. did some trading/bartering for at work with some of our produce for some that others had grown. The meat part was wild fried turkey procured from the woods behind the house . Only thing bought for this dish was the blue cheese and cilantro/lime dressings for dipping and the cold long neck to wash it all down, the BilletHead's are stuffed too, BilletHead

Hard to cook to order too . Big fire on one side of the grill and little fire on the other side I suppose so only half will be on fire, BilletHead

    What's Cooking?

Well this could fit in three different places, foraging , garden and here on the food threads. I did a stalk into the neighbor/friend/farmers sweet corn patch this morning (with permission of course ). Did some foraging while I was in there and lookie what I found, Farmer was there picking too. Said take all you want as we don't want it to go to waste. I filled two buckets and may that the Mrs. Saturday morning for more. Now to where it fits on this thread. LUNCH! Two of the four ready to be gobbled up, The leftover skeletons , See how clean that plate is? A nice slice of bread to sop up the S&P, butter and corn juice! BilletHead
  7. That and a pick a nick basket , while looking for boo boo . Nice to have a variety of creatures around and hope they will always be here. Lions, tigers and bears oh my, BilletHead

    What's Cooking?

Thai beef and cabbage salad, Using up some of the leftover grilled burger meat from yesterday. Dressing of lime juice, brown sugar, fish sauce, Sriracha, and olive oil. Crumbled hamburger paddies crisped up in some olive oil, add some of the dressing sauce to finish off the crumbled burger. Then shredded napa cabbage, green beans ,thin sliced green onions, sliced hot chili and chopped peanuts. Pretty much throw it all together with the remaining dressing sauce and a little more fresh lime juice then chow down! , BilletHead approved BilletHead
  9. " Were going to need a bigger boat" I heard at the swap meet the MDC stocked them by dropping with helicopters like they did rattlesnakes, cottonmouths and copperheads. That they did it to control the population of invasive carp and wake boats, BilletHead

Smoky caramelized onion burgers, Recipe out of this months cooking light magazine. Ground sirloin or 90/10 ground beef. Caramelize onions and when golden some minced garlic. Cook until fragrant. Let cool and chop up pretty well. Add to two pounds of the ground meat, plus S&P, paprika and ground cumin. Mix well nd form paddies. Throw on the grill, Mix the topping. Mayo, finely chopped roasted red bell pepper, minced chives. Mix well, toast buns. Pull burgers off the grill and load um on the buns with tomato slices (our first from the garden), red onion slices and baby arugula leaves ( we subbed mixed baby greens). Last step is stuff your face . We had some of the limited edition wasabi Doritos (get you some ) , Long neck blue moon or beverage of choice, BilletHead

    What's Cooking?

If you were closer I would gift you a jar of goose fat. Since it is rendered out it is considered processed and does not go against yours or my legal possession limit , BilletHead

  20. So if this crispy chicken sandwich was caught in state waters you are illegal buying and the seller is illegal too. If you were the catcher of this crispy chicken sandwich and you had properly labeled the paper bag all you need to do is sign a piece of paper stating the contents and date (also on the signed paper) are a gift to Wrench. Then when he gets the crispy chicken sandwich it leaves your crispy chicken sandwich possession limit and becomes part of his crispy chicken sandwich possession limit until he consumes the crispy chicken sandwich. This is the truth, the whole truth and nothing but the truth. I could not find the daily or possession limits on the MDC website . Now to other things, I truly cannot think it is that hard to not label your fish and game. Pretty easy. I have my conservation number memorized, Mrs. BilletHeads also. I really take care of what I put in my pie hole. If t isn't going to be consumed fresh it is vacuum sealed. Next step is to take a sharpie and label. laid out flat to be frozen. My deep freeze has plastic tubs with numbers on them. There is a list in the house and whatever goes into one of the numbered tubs goes on the corresponding list. Forgive me I am old and forgetful but I can remember what I have. No freezer burn or off tasting fish and game. Nothing gets wasted. There is also a list during waterfowl season of bird count and species so when it gets to a point of reaching a limit we eat, gift out like the crispy chicken sandwich analogy above or don't' shoot anymore. Pretty simple. BilletHead

    What's Cooking?

Neat, I like crispy whites and liquid yolks. Will try that in a very small skillet. Bet you could go through the olive oil quick in a large skillet. That and I bet you can really taste the true egg taste like I do using goose fat instead of traditional bacon fat. BilletHead
  22. Have you all got Andrews replacement tackle sent off? The BilletHead got a box of goodies in the mail this morning. Post office says it should reach him tomorrow. I was bad in the past about finding bargains. mark downs, clearance racks, sales and worst of all if I had something I liked I would get another just in case . I am glad now as the extras will be passed along to someone that needs them. In the bottom of this box is a plano box with probably 500 assorted crappie tube bodies all separated. That should keep him busy for awhile. Good fishing to you young man, Mr. and Mrs. BilletHead
