  1. Me likes a good mess of tree rats! I pressure canned a bunch of them one time. I don't care how old they were after canning it was hard to reach in the jar and pull out a leg quarter. If you grabbed a bone the tender meat would stay in the jar and you would be left with a bone. Yes Justin that is eating rich! BilletHead
  2. Where does one draw the line at rich? You can be rich in many ways. Tell you what Oneshot. When you reap your homegrown harvest and it is something I can buy at the store I will trade you equal from what I get at the store. There is no equal to homegrown, BilletHead

    You know I am getting pretty bored when I go to canning. Especially on a hot day in summer. Been hankering for some home canned chili. I did some a few years back with deer and it was great. No beans just meat onions tomatoes and spices. Oh yea one nice garden jalapeno too. Used the ball canning book recipe. It calls for ground meat but last time used diced venison and this time I used Canada goose. Did pint jars with a process time of 75 minutes at ten pounds of pressure. Looks real good and I will let it sit and maybe try on chili dogs first time, Billethead when he gets bored become domestic.
  4. Another tragedy as a Woman goes over the Caplinger dam. It has been discussed the past from this location and others. Mrs. BilletHead and I have seen this first hand when we pulled an expired guy out of this place. Reading this brings back memories when it happened. Water is powerful and needs to be respected. I have told you before if you make that run North to the big city see what is in season in our garden and I would meet you on the highway on your way by.     Coming right up, stuffed cubanelles , Todays feast was goooooood. Stuffing consisted of Italian sausage made with Canada goose and pork. Added onions, garlic, oregano,red pepper flakes and tomato sauce. Cooked it all up., As the coals on the grill got ready peppers were sliced and stuffed with the meat mix, Then the peppers put on the grill, indirect heat and lid on the weber to cook some, Cooked for a while, how long? Don't really know just kept peeking once and a while until the peppers started getting soft and moisture in pans began to bubble. So now to top it off with Colby jack cheese and back to cooking covered, When cheese began to bubble time to take it off, So what for a side? Well did not really have anything in mind but did have some Libby's jalapeno potato salad left over. Spicy stuff we made Thursday. Plated up and feasted, washed down with peach iced tea, BiletHead

I may have to rethink how I think of you Ok good luck dads on your cooking today, It will be stuffed peppers here by ourselves. Got the call from the Son it is all good. Here to the fathers on here still with us and those who are not and to the children who remember us. We all have the task of raising them the best we can.   8. Looking good there John! While prowling around in the garden this morning Mrs. BilletHead found in the maze of tomato vines a nice big black krim turning red. We are so ready for that first big tomato. I am thinking this will be the best crop we have ever had so I may can some tomatoes for the first time. Got a couple of questions for the gardeners here. I have a friend (contrary to popular belief I do have a few) who tops his tomato plants when a good crop comes on. We all know there is a certain time when fruit still comes on but does not ripen. I don't know how many times there are green tomatoes hanging on into the early fall that never ripen. I remember last season I was chastised by one for not letting them ripen. Others said to cut the whole vine, hang them up and they will ripen. Oh back to my friend he says topping them and keeping them topped lets more go to the existing fruits making them better? So what say you all? This morning too we trimmed/ topped the herbs to encourage growth and keep them from flowering. Have loaded nine trays with rosemary, basil and oregano. Sounds like a lot but when dried it will be minuscule. Will keep doing this all season and soon we will have enough for winter. Cilantro on it's downhill slide . From what I have read it prefers cooler weather and we know this is gone for the season. I am letting it go to flower and hopefully seed (coriander) so Maybe will get some of it too. I have done a second planting and we will see how it goes. I know it is cheap for a bundle in the store so if it doesn't make no big deal, just like you all nothing like growing your own. So now to the second question. Putting some smoke to the herb (got to be careful how I word this cuz we don't smoke the herb) . I know you can buy smoked paprika although I never have really tasted any smoke in it. So what do you all think of smoking some of the assorted herbs before dehydrating? We like the smoky aspect in some dishes. We did some fire roasted salsa last season, great stuff but the smoky aspect was nil but could you imaging smoked cilantro in it?     Pizza, Well worked up the chanterelles found Thursday, a mix of regular and cinnabar. Cooked some onion, chopped garlic and added the chanterelles for a stir. Then some chopped prosciutto to the mix. A bit more cooking and stirring. A couple store bought pizza crusts ready. A slather of jarred sauce of roasted garlic and tomato on the crust. Not too much. Out of the skillet the heated mix goes down, then mozzarella cheese, fresh basil from the garden, first tomatoes from the garden too ( sliced cherry). Then some shredded pecorino romano topped it off. Then into the outdoor gas grill to melt together. We did two and glad we did. I got one crust too done burnt really so right before eating we got double topping on one pie Pretty tasty and with all the busyness of all the toppings you could still taste the shrooms. This is worth repeating, BilletHead

  19. Found a few more Chanterelles. Enough to top a pizza which I think is on tap for tomorrow. Found some of the biggest cinnabars We have ever found. They will be added to the standard chants on the pizza. Here are some pictures I thought were cool. Some corals with these and finally some I would not touch with a ten foot pole! Now that the rain is over for awhile and the heat being turned on the woods should come alive with fungus, BilletHead

  22. It's what we all have and should do. It's young people like this who will be taking are old carcasses fishing when we need help. Ronnie she would probably let you. Funny thing is this pond is small. I have caught a 24 pound grass carp in there with my fly rod several years go but never a fish like this. Same pond Mrs. BilletHead caught koi on the fly. Between the fish food and koi these cats are happy, BilletHead
  23. This is a good one people so pay attention, We have a member on here, a non posting one. Ham, Grizz Wilson and Got Muddy know him as do I as he is my fishing partner when Mrs. BilletHead cannot go. He has a Grandson with the name of Micah. I asked Micah if I could share this story with you all and wanting to make sure how to spell his name I asked him. His response Just like in the Bible in a loud proud voice. The lad is 14 years old but you would think meeting him he is older. From Arkansas he has his learners permit already. Plays baseball and Football and attends a Christin school. So he got to spend time with his grandfather this past week. They went to the river and Micah caught a hybrid. Photos on an older phone and they are trying to get them. So the other night I got a call from Richard. River is messed up with all the rain and where do you think I could take Micah to catch a catfish, you see Micah likes to catch and eat catfish! I respond hey why don't you take him to my mom's? (BilletHead's mom has a nice pond ) do you think she would let us? Well heck yes it would tickle her to death. Get some bait shrimp and we will go. So we will start with yesterday. Over to the house they came and we loaded gear in the truck. Micah's grandpa has been letting him drive so when we got ready to go I asked hey Micah have you ever drove a big truck, his response yes I drove my uncles once. You want to drive mine? (3/4 ton, extended cab, full sized bed) He puffed up and hopped in the seat and off we went. Mostly muddy pot hole ridden country roads, he did well and we arrived at Mom's. Introductions made and to the pond we went. First thing out came the bait to my fright CHICKEN LIVERS! Egads mushy chicken livers that looked as they had been froze before and four night crawlers. Where is the shrimp I asked. Well we decided to use this. Ok lest get to fishing and fishing they did. There were several fish caught but not the leviathan I told him lived there. They kept two for cleaning. As we left Micah asked my mom may I come back tomorrow, well yes help yourself. So now it is going to get real good, I mean real good. So I get the call this morning from Richard. Do you think it would be alright to go again? Yes go, will you be over there? Nope Mrs. BilletHeads day off we have thing to do and I will talk to you later. I call mom and give her the head up. So we do our thing and after getting home I call mom. Did they show up? Yes they have their rain suits on and Micah is fishing in the rain. Later I get a call and it is mom, a bit frantic. He did it she exclaimed, he caught the big one. How big I ask, BIG she says he can hardly lift it. They want to know if you will take pictures. Well yes send them over. Son here they came both with grins from ear to ear Micah driving. Out of the explorer with Micah saying this is going to scare you. So out he drags this feed sack and out comes this fish, a true Levitation for a kid and an adult too. We tried to weigh it and quickly broke my scales. Then we did the bathroom scales with fish in hand and then not. Ready for this? 28 pounds and 39" long. I cannot tell you how many smiles we showing. They fished three hours without a bite and right when they were getting ready to pick up the fish bit on SHRIMP. I told Micah he would of caught this one yesterday if he had the right bait, Photos of the Leviathan, Micah and his grandpa Richard. This couldn't of happened to a better young man, BilletHead

  25. Ness get my vote too. Well he did not tell me the other day if he is left or right. Maybe he straddles the fence? Oh ohhhhh I hope I have not made a buddy that swings both ways? I think he knows where I stand. That did not scare him off Can I get on this money go round too Terrierman? You know we could campaign for him while fishing. Maybe with a guide somewhere?
