Yes pick and use. I did make a mistake though. Been right here on the world wide web learning about drying garlic. Looks like I needed to leave the whole plant, roots and stems. Tie several plants together by the stems and hang to dry for a few weeks then take tops off, trim the roots and store. Right now I have those pictured on top of a fan trying to dry some. I could also and think I will take out the cloves put in a jar and add olive oil and store in the freezer. if you store in oil at room temperature botulism toxins can occur. Ok and all is not lost I can run up the road to the great outdoor pantry and pick more. Funny my freezer gets fuller instead of emptying out. BilletHead

I knew we had wild onion or garlic growing up the road, actually all over. Never gave it a thought about using it. This spring early I plucked a start and cut the bulb in half. Smelled like garlic or onion like but slicing it I noticed a center and little concentric rings around that center. Thought more like garlic starting to form. As the tops started maturing and a little seedling head formed I picked one today.. Garlic for sure. Picked of a tiny clove off the cluster and popped it into my mouth. Wow garlic with a hot bite! Came back to the house and grabbed a bucket. Started pulling plants from the damp soil. Many different sizes. If I could find a lone plant there was a big head.If there was several plants clustered together smaller deformed heads where the cloves had separated from the head in the past, not went anywhere and tried to grow in the tight group. Here is today's finds. One very large head that rivals some heads I have bought in the store, smaller ones and one that has started breaking apart ready to make many little plants. I am thinking of incorporating some of this wild garlic in some of our dishes, BilletHead

Well now to today. Not quite like yesterday but tasty none the less. Chicago dogs and fresh sweet corn. We picked about seven dozen ears of the corn. I think this is a one sided trade. I get to reap the farmers geese he does not like and pick his corn too :). BilletHead

There was a pop or two throwing in the chili bean paste and minced ginger. At least you guessed right and they were my legs. I was waiting to see if anyone asked if they might be Mrs. BilletHeads legs. I assure all hers are shaved but can get a bit spiky between shaves. Could you all get away with saying things like this? I can. BilletHead

It does have a hot bite but not overwhelming hot. Just calls for hot chilies, two to five. We used serrano and put two in there. It is the Sichuan peppercorns which recipe says optional that adds quite a dimension. Numbs the tongue. When we first bought the peppercorns at the market I just bit one to see what they tasted like. Lips and tongue went numb and tingly. Mrs. BilletHead started laughing out loud.

Man you are as good as the chief getting those ribs and sides to stick to an upside down plate. In the rib picture where they are on the cutting board. The 409 is that what you swab the ribs with as they are cooking ? At least we know you are a clean cooker. :). Would trade you a dozen tomatoes for a slab of ribs. Sweeten the deal with bonus cucumbers. Blackberries? Picked a gallon of them today. BilletHead

OOoooh Chicken flavored wood pecker, Wonder if I could stir fry some? :). Right now we have four feeders like that one. Going through a half gallon each day of sugar water. At least twenty buzzing around while I was messing with the camera. So far we have never had a problem with wood peckers. You can keep them over your way buddy. BilletHead

Revisiting Fragrant Sichuan Duck, I have shared a photo of this dish complete on a bed of rice but I thought I might revisit it again with some cooking step pictures added. I might add I am also loving the gas cooking wok. Outside on the screened in porch out of the rain, bugs and not heating up the house. Do the prep work inside, bring the ingredients out to the porch and go to rocking the wok. Start out with a pound of skinless duck breasts sliced into thin strips. There is a marinade you let the duck soak in for an hour to overnight. When ready you "velvet" the duck in two batches. To velvet you heat your oil to 275 and not exceed 300 degrees and cook for 45 seconds. We use peanut oil. Set the meat aside and dump oil and wipe out the wok. Heat up some duck fat, in our case goose fat I rendered out last winter to almost smoking. Add chili bean paste and ginger and give it a stir for 30 seconds. Add garlic,chilies,Sichuan peppers, bamboo shoots slivered and thin sliced green onions, stir fry for a minute. Add the duck and the sauce we prepared and bring to a furious boil for a minute to a minute and a half. Then serve, we do it on top of rice, Good eats right here folks! We each had a plate full and then the Mrs. Got us another bite. We did a simultaneous buurp unscripted. Life is good here in BilletHeadville on this fine Sunday, BilletHead

Lost the hog in the jungle undergrowth. Thought I might of seen his beady little eye in there while picking maters . He is a short pig and cannot jump so I doubt he cold get to the top of the gargantuan plants eating the ripening fruit. Billethead

Today's feast was Hoisin Chicken with Grilled onions, http://chiwulff.com/2011/09/02/chi-wulff’s-friday-feast-2-september-hoisin-chicken-with-grilled-onions/ Great stuff. The only deviation was the protein in the dish was wild turkey instead of chicken. The turkey was cut up and grilled in the Holy Wok as was the sliced onions and peppers. The side was fried rice and a ginger beer to wash it all down, I managed to get this all into my gullet. Mrs. BilletHead had two of three bites left. I shamed her and told her she should clean her plate. Buuuuurp, BilletHead

Neat info Johnsfolly. Something different I like that, Today I just scavenged we had no meat. No I am not going to be a vegetarian blasphemy I say! Just no meat and I lived through it. Homemade granola cereal for breakfast, pistachios for lunch and caprese salad, cucumbers and onions and fresh corn on the cob for dinner. One soda today and just plain old water. Did not even partake of my daily single that means one beer. Oh I feel so healthy :). BilletHead
