Only spoonbill I eat myself are the small ones we get below Bagnell on the lower Osage. The big ones from the James arent that great. Loz fish are a little better but still not that great. My favorite is fry them in beer batter.

Best recipe DIg a pit get hot coals going put spoonie steaks on hickory board over pit seasoned with onion bellpepper garlic salt butter touch of hot sauce. Drape with foil flip once when ready pull off when flakey man oh man throw that fish away and eat the board!
