This is Fresh Crappie in one of my sauces. Bake the Crappie at 350 for 45 minutes in aluminum foil with a light coating of olive oil,

The Sauce is 1/4 stick butter. 1/4 teaspoon Accent Flavor enhancer. 1/4 teaspoon Paprika. 1/4 teaspoon Cayenne pepper. 1 teaspoon lemon juice, 1/4 teaspoon lemon pepper and 1 tablespoon sugar. Heat in microwave for 1 minute 30 seconds and stir. Pour over crappie while still stirring.

The Carrots are also cooked in a sauce. 5 minutes medium add 1/4 stick butter. 2 tablespoons brown sugar and 1/4 cup Honey.

I'm not a big fan of sauces as a rule, but I'm thinking this approach would be a good alternative to the fry/oven-fry routine I seem to be stuck in.

Back in my salmon catching days I was a big fan of Hollandaise sauce on salmon. Dunno how that would be on a fish like crappie. Hollandaise isn't exactly what you would call a "heart smart" sauce. but sure tastes god.

Dang, from the title I figured F&F had perfected a new trolling rig... to dangle carrots... in front of crappie...

I can't dance like I used to.
