Feathers and Fins Posted August 24, 2013 Posted August 24, 2013 This is Fresh Crappie in one of my sauces. Bake the Crappie at 350 for 45 minutes in aluminum foil with a light coating of olive oil, The Sauce is 1/4 stick butter. 1/4 teaspoon Accent Flavor enhancer. 1/4 teaspoon Paprika. 1/4 teaspoon Cayenne pepper. 1 teaspoon lemon juice, 1/4 teaspoon lemon pepper and 1 tablespoon sugar. Heat in microwave for 1 minute 30 seconds and stir. Pour over crappie while still stirring. The Carrots are also cooked in a sauce. 5 minutes medium add 1/4 stick butter. 2 tablespoons brown sugar and 1/4 cup Honey. https://www.facebook.com/pages/Beaver-Lake-Arkansas-Fishing-Report/745541178798856

kjackson Posted August 25, 2013 Posted August 25, 2013 I'm not a big fan of sauces as a rule, but I'm thinking this approach would be a good alternative to the fry/oven-fry routine I seem to be stuck in.
Quillback Posted August 25, 2013 Posted August 25, 2013 Back in my salmon catching days I was a big fan of Hollandaise sauce on salmon. Dunno how that would be on a fish like crappie. Hollandaise isn't exactly what you would call a "heart smart" sauce. but sure tastes god.
