Catfish from a clear water lake or river is incredible good eating. I won't say it is better than walleye, but I will admit it is just as good.

Flat head belly meat and cheeks. Go ahead and tell me what's better. Fish only gets so good and IMHO flathead stands up to any of the sunfish and the good stuff from the salt as well.

I'll 2nd that, did a fishing trip in Ontario one year and the pike were tastier than the walleye - but bonier than heck, so we stuck to walleye fillets.

Boney SOB's are hard to clean, that is for certain.

But, once you learn the trick, there's a tender loin on them that is pretty fine.

Honestly to me a flathead doesn't taste any better than a small channel cat, except for the belly meat, may be the different texture of it but it is delicious. As for catfish in general I still like bullheads and small channels as well as any of them.

we used to have a wild game fry every tuesday at one the gentlemen's farm at greenfield and the guys would sometimes set out limb lines up above the O highway bridge on turnback and the flathead coming out of that cool clear water are really hard to beat. they would put those fish in a stock tank with fresh well water and flush them out for a couple of days before they dressed them out. man o man i'm getting hungry!!!

The flathead and walleye lovers are all on and I like both along with crappie. But, I had an experience at an Ozark farm one time and have to add this fish to the list. We were fishing an oxbow of the Maries river and it was loaded with gar. I caught a good sized one and tossed it in the weeds. The farmers wife asked what I was doing and she said no way put it in the cooler. She cleaned that fish, breaded it in home made field corn meal and it was excellent and no bones. Haven't had it since but it's darn good.
