BilletHead Posted October 5, 2015 Posted October 5, 2015 Making of the special dust. Most of the last of the garden hot peppers. A mix of chilies and jalapenos. Gave them a wash, used scissors to cut off the stems and a coring tool to get out 99 percent of the membrane and seeds. Took all the peppers and smoked until soft. Then dehydrate until crispy, crunchy moisture free. Put in food processer. chopper, coffee grinder and process to a powder, When doing this I sneezed and got a runny nose . Use sparingly. This will give your meals a smoky kick and still not overpower the meals taste. ness Posted October 8, 2015 Posted October 8, 2015 Looks good, Marty. I always dry Anaheim and Poblano chiles and grind them up to make my own chile powder. Just the right amount of heat for me. Haven't done the smoking thing though. BilletHead 1 John

snagged in outlet 3 Posted October 8, 2015 Posted October 8, 2015 Do you have a dehydrator? Is there a method to dry them without a dehydrator? That looks really good. Pete
BilletHead Posted October 8, 2015 Author Posted October 8, 2015 Yes Pete I have a dehydrator. I know they say you can string the peppers up and hang to air dry. Pete I've dried them in a low oven with the door propped open slightly. It can take several hours or overnight depending on the chiles. BilletHead 1 John
