jdmidwest Posted May 26, 2020 Posted May 26, 2020 I am a need to know kind of guy. Always searching for the truth. Go to the grocery store, no pork chops? They have pork butts, pork steak, pork loins and tenderloins, pork ribs, country ribs, hollywood ribs, sirloin chops, bacon, sausage, ground pork, brats, baby back ribs, chitlins, and pigs feet. NO Pork Chops. I know there is a problem, the Covid got all the meat packers and prices have doubled. Nothing to do with the Meat Packers Union I am sure. When you cut up a pig, there are pork chops, its a select cut. The pigs are not deformed now and quit growing them. But I have not seen a Pork Chop for 3 weeks. Thoughts???? I think you are thinking about Hollywood ribs. But that is the tail in portion, still not charging a premium for them around here. Rub it with olive oil and a spice rub with brown sugar, cumin, garlic and onion powder, salt and pepper. Cook till 140 and let it rest. Pork steaks have been too thin here. Lots of fat on them.
