With only having 3 pepper plants this year, they sure are producing well. I like to freeze a few pounds for chili, roasts, etc. in the winter time. I start out by doing a Cider wash, cutting them stems off, cutting into slices, then lay them flat and do a flash freeze for 3 hours. This keeps them from sticking together when i place them in bags. Some remove the seeds prior to freezing, but i like the extra heat when adding to foods. Great way to have peppers when the garden is done. 
 

I use a straw to suck out any air before zipping tight.

I use my food saver to suck the air out and seal. When I flash freeze mine I put wax paper down, then they do not stick to the pan.

Mav, I typically will do the same with a bigger batch. I used to use wax paper for the freeze but found that peppers won’t stick to that round sheet. Using the straw is a great way when you don’t want to go thru the hassle of getting the suction machine out.
